When Caymus was Caymus!!!

It is good to remember the style of wine Chuck used to make. His wine from 2011 backwards. The wine I used to collect. I refer to this now as Caymus Classic. I have requested they make this style again every time I see a Caymus representative. Just 500 cases by simply picking earlier at lower brix and applying past winemaking. They under estimate how fast those cases would sellout.

I get they made a business decision to make a sweeter wine that will drink easier young. They get better critic scores and sell to a larger customer base. A customer base that generally drinks it like supermarket buyers…within the first two weeks of purchase.

Of course, 1997 was an epic vintage in Napa and this 97 bought weeks ago has been well stored and in perfect condition. I miss this wine as it has so much more character than their 2012 vintage & forward. So do many former Caymus collectors.

The nose reveals, bright, ripe; blackberries, black raspberries, dark cherries that are just starting to reveal some liqueur notes, raspberries, strawberries & plum. Sandalwood, old, dry tobacco, baking soda, mid berry cola/licorice, some light graphite, dark spice, dry stems, decayed red flowers, red roses and violets.

The palate is exquisite. It is all beauty with nothing bitty or angular. Ripe, juicy, lush; blackberries, cassis, black raspberries, dark cherries with hints of some liqueur notes, raspberries, strawberries, mulberries as it unfurls & plum. Sandalwood, old, dry tobacco with ash, baking soda, mid berry cola/licorice, some light graphite, perfect dark spice with some tongue heat, mocha, dark chocolate baking bar, clove, cinnamon, nutmeg & hints of vanillin, dry herbs, baking soda, dry limestone powder, top soil with pebbles, slightly moist volcanic clay, dry stems, decayed red flowers, red roses and violets, excellent, rainfall acidity and an elegant, balanced, nicely tensioned & structured, polished finish that last two-minutes and lands on spice & gentle earthy tones. I miss their distinct spice. Glorious!!!

This bottle is somewhere on the other side of the bell curve and still singing. Still very sound. It won’t improve and recommend if you own, drink them sooner than later but certainly not a rush.

So beautiful and clear in its purpose, titillating on the nose and fulfilling its promises beyond. Balanced and velvety dark red fruit, hints of black tea and cassis but all in a more Old than New World Gestalt. Lots of secondary stuff emerging you just want to sip it slowly. If anybody wonders how well these age, track one down, it’s so worth it. Kudos @Cathy Corison for making this distinctive and enduring bottle! — 7 years ago

Decant for sediment (lots of chunky/fine sediment) and pour. A stunning medium ruby red color with little signs of aging. On the nose: big inviting notes of dark fruit/currants, worn leather, herbaceous, smoked meat, funky earth, menthol. Taste: silky, evolved, expressive structure with brambly plum, currants, old leather, dark chocolate, graphite, and a black raspberry-iron-dried herb long finish. YUM! It's what's you want in an aged Napa cab, and glad to have just acquired 3 more bottles. — 5 months ago

Another tip: I keep a bottle in the fridge to pour decanted sediment dregs into, and use it (except for the muddy bottom part) for cooking. That way my coq au vin or daube is braising in really good stuff from my cellar!

Blackberry jam, pepper, a bit of celer, tar, meat juice with a gamey note too. It's intoxicating and it calls for a quick dive. The palate starts with a very nice blackberry jam layer which expands on the width but soon comes a massive acid backbone which pushes the structure toward the end of the palate. It's super powerful yet very complex with different layers: some grip on the side, a buttery, creamy touch and mouthfeel, the acid backbone and some tannins which kick-start and expending finish, very fresh, with blackberry and pepper and a slightly bitter note, just underlined by the gently drying tannins. This is magnificent and comes easily in my top 3 wines all time. I love it and it's an understatement. #birthdaytreat — 6 years ago

Note to @Delectable Wine the winery is pronounced “Aranthia” but spelled “Arancia”. A Spanish ringer for Chablis (some people sense Chenin leanings) and a good one at that. Tropical flowers and citrus on the nose, but the palate is energized with lemon, mineral, bright acid, and some stone fruit bitterness. Very light on its feet, but finishes somewhat longer. A wine from Anthony that's finally ready. Just kidding. It's the volatile acidity holding this wine together. Completely resolved tannins. Ripe lean; blackberries, dark cherries, blueberries. It's almost all fruit with just a hint of earth and minerality. Fun to drink. I always like to ask, what were you doing in 1978? Nice of Lilian Barton to model the bottle for my photo. 2011. Blanc. No one drinks enough of this. That's because there are so few things to which its a good partner, but it would be an incredible cheese-and-charcuterie wine. Broad and oily, there's just enough acid to keep you coming back for more. Sun-baked yellow orchard fruits dominate, but there's more exotic fruits too (mango and dried pineapple) yellow flowers, tons of almond husk bitterness, green olives, bay leaf, oregano, tarragon, white cheddar. Oak is assertively present but not overwhelming. Place dominates over grapes here, as it's a mix of Clairette and Grenache Blanc and a hodge-podge of other things. — 11 years ago

Medium deep ruby , quite thin garnet rim . Quite a lot of cassis, herbal grafite notes , touch of blackberry , scorched earth , a bit for floral after a while in the glass. On the palate this shows more sweet dark fruit, touch of spicy oak, blackcurrant , dark cherry and cacau . Balanced acidity and sweet slightly grippy tannins , just balanced alcohol . Spicy sweet blackcurrant, grafite tinged finish , decent length. This is still young and quite fruit driven but is enjoyable now with food . Better in 5 years or so and will last well a further 8-10. — 7 months ago

This is not a knock on anyone or this producer. For 10 years a friend of mine was the Assistant Winemaker at Opus. He is now back in Bordeaux, rebuilt & raised the quality of Clerc Milon. Now is in charge of all Rothschild properties. This is just me thinking out loud. I have been to this property many times and bought a glass of their Cabernet to take to their top deck and take in a spectacular view of the Napa Valley. Enjoyed many of their vintages in those very nice moments. However, knowing the quality of 2012 vintage and their price point, I and I think most expect & want more than a 92 point wine. Which begs the question, how long can they push bottle price with this level of quality? At what point does the quality price ratio kick in? To a bigger picture, how sustainable is the high quality respected producer wine economic model going forward? To me, a fascinating question going forward.

Yes @Somm David T , this was actually served blind , the only wine at lunch ..and we had plenty of time to get to know it before the big reveal . I was trying to evaluate the quality in the glass without the distraction of the label, which is always an illuminating experience . It’s a good wine, and went very will with our steaks but it certainly doesn’t represent good value nor is it a stellar example of 2012 . I would be perfectly happy to have it again mind you , as long as I wasn’t paying .

Razor sharp acidity and minerality at the core, on the linear side at the moment but with enough flesh on the bones to keep it from being too austere. Right now it is better with food than on its own, but just sipping it still delivers plenty of pleasure. — 7 years ago
