2003 vintage. *Full disclosure* Not the biggest Pavie fan as I've consistently found it underwhelming for the commanding pricing and eternally in need of yet "another hour" in a decanter. Great fill and opened with a Durand but feel that the cork (in great shape) would have come out decently easy with a standard wine key. Given my issues with Pavie in the past, brought over two decanters so as to agitate the wine between them four times. Initial pass, good amount of sediment with the vast majority of it caked onto the sides of the bottle. Yay! Great boysenberry/raspberry nose noted during the first decant. Tasted after two hours. Medium body. Some earth, the aforementioned berries and hints of rich chocolate cake, including frosting, on the scene. Despite all the lavished attention and fuss, still suspect this would show better twelve hours later at breakfast with waffles and Count Chocula cereal. Clos Saint‑Jacques is often hailed as the “Musigny” of Gevrey‑Chambertin. It combines the signature power and structure of Gevrey with the elegance and finesse of Vosne‑Romanée, and Armand Rousseau’s bottling has always been remarkably consistent.

2004 was a challenging vintage—a weak year in which many grapes failed to reach full ripeness. Now that it has entered its drinking window, it opens up quite nicely. This is not a flamboyant style; instead, it leans more toward herbaceous notes and bay leaf, with hints of florals and red cherry. It has a mineral quality, yet without the saline or briny character often found in other Gevrey vineyards. The acidity is well‑balanced. The overall bouquet is delicately fresh, reserved rather than exuberant, yet persistent, and it doesn’t evolve dramatically over time. — a month ago

2 hour decant(lots of chunky sediment). A gorgeous dark purplish garnet color. On the nose: Intoxicating notes of ripe dark fruit, forest floor, pencil shavings, herbaceous, smokey oak, minty chocolate. Taste: silky, rich, dense wine with dark cherry/plum, dark chocolate espresso, licorice, and a very spiced graphite/sour cherry never ending finish. YUM! Rich black cherries, cocoa spice, orange peel, dark flowers, subois and earthy.
Long generous finish with crisp acidity and fine grained tannins.
This was bequeathed to me years ago at a Celebration of Life for a gentleman who was greatly influential and guiding on my wine journey.
A stunning wine from an incredible individual.
