I haven’t had a lot of aged Chablis, but this is drinking remarkably well for being 13 years old. Austere; high acid but with some weight to it. Flint and lemon peel but I would wager this saw at least some oak as there is definitely a little butterscotch in the background both in the nose and palate. Nose of over ripened apples, citrus, light red fruits, spices, minerals, yeast and brioche.

Medium plus in body with medium plus acidity and small bubbles.

Dry on the palate with strawberries, sweet raspberries, cherries, citrus, apples, yeast, light earth, brioche, spices, minerals sea salt and herbs.

Long finish with apples and herbs.

This is a delicious Champagne. Elegant and rich. Fruit forward and easy drinking. Complex and interesting.

2004 vintage. This was a highlight reel. Acidity, dirty, pretty, fabulous mousse, delicate, concentrated, fruit, long finish. It had it all at some point in the tasting experience. Looks to go long in this state…at least another 7-8 years (till 2033) without any noticeable dropoff. Can’t remember the last time I had a better rosé brut. Magical. 03.01.25. — 4 months ago
