I have written a few times regarding my tale of Caymus & Caymus Classic. Their vintages post 2011 and their vintages pre 2011.

I have at event tastings that Caymus was pouring, encouraged their staff to talk with Chuck to make both Caymus & Caymus Classic. Recently, I emailed them to pass on my thoughts to Chuck asking him to make both. If you liked Caymus the way it was, I encourage you to do the same. Their post 2011 Caymus Cabernets are picked at higher brix and syrupy sweet. I get why Chuck changed. Many like sweeter Cabernets that drink easy young. That is not my wheelhouse.

In my intermediate wine days, I aged and enjoyed many pre 2012 vintages. This perfect bottle bought on the secondary market at around $70 is extremely well stored. The cork when I cut the foil looked slightly depressed, when I pulled it with an Ah-so was next to new.

I enjoyed this with a Ribcap, not the best wine for that steak but, ok. This 07 is more filet or NY Strip.

The nose shows; a very dark core of sweet currants. Ripe-lush-blackberries, black cherries, the blackest of plum to pudding, black raspberries, poached/slightly baked strawberries, circling raspberries, anise to black licorice, woven baking spices-cinnamon, clove, nutmeg & vanilla, caramel, dark chocolate, mellow dark spices, sweet tarriness & dark earth, dry crush limestone, moist, grey volcanic clays, dry top soil, dry tobacco, some sweet graphite, steeped black tea & withering/candied, dark, red flowers framed in liquid violets/lavender.

This bottle now nearly 18 years in bottle has not faded. It is at its precipice and will hold a few yrs. 2007 a grand Napa vintage. Decanted a little over an hour and enjoyed over the next 90-120 minutes. With this experience, another hour in the decanter is even better.

M-M+ velvety, rounded, tannins. The palate is round, ripe, lush, ruby fruits of; dark core of sweet currants. Ripe-lush; blackberries, black cherries, the blackest of plum to pudding, stewed plum, black raspberries, poached/slightly baked strawberries, circling raspberries with notes of liqueur overtones, anise to black licorice, woven baking spices-cinnamon, clove, nutmeg & vanilla, caramel, dark chocolate, black licorice, dark berry cola, distinct dark, Caynus Classic spices w/ palate heat, herbaceous notes, sweet tarriness & dark earth, dry crush limestone/rock, moist, grey volcanic clays, dry top soil, dry river stone, charcoal, notes of menthol, dry tobacco, leather, dry oak barrel shavings, some sweet graphite, steeped black tea & withering/candied, dark, red flowers framed in liquid violets/lavender, perfect, round acidity with an incredibly; balanced, well knitted-toned-structured, elegantly/smartly polished finish that goes on and on and long sets on beautiful earth & spice.

Popped and poured; enjoyed over the course of an hour. The 2006 pours a deep straw color with a persistent mousse. On the nose, the wine is developing with lovely notes of slightly bruised apple, white flowers, lemon curd, brioche, slivered almond and a mix of chalk and limestone minerals. On the palate, the wine is dry with medium+ acid. Confirming the notes from the nose. The finish is long and creamy. I wish I could drink this all night long. Alas, only a single 750mL and not a Methuselah. Drinking well now and will only be taking on more secondary and tertiary character. But if that’s your thing (and I can get down), this will deliver well past 2036. — 7 months ago

Slightly lighter garnet core , lighter terracotta rim . Quite muted on the nose , quite herbal and spiced notes, some red plum and floral sous bois , black tea . After a while this opens up slightly , showing a bit more detail , but never jumps out and grabs your attention as other bottles have. On the palate this is better , with the roundness and slightly sweet , red plum , summer fruits , sous bois and lightly herbal , grafite tinged , saline finish of reasonable length . Quite refreshing acidity and suave tannins . On this basis drink now and over the next few years. However , there are better bottles out there . This was disappointing compared with other bottles I’ve had , though the palate was more sound and it wasn’t flawed. A bit of a perplexing bottle. — 10 months ago

Really good. Nice deep dark fruits with nuances of red fruits. Fennel, eucalyptus, tar. Gorgeous acidity and long 1-2 minute finish. All in that well balanced, sophisticated way with now resolved tannins that lift it higher. — 7 years ago

Opened prior to dinner; enjoyed over several hours. The 2012 pours a light ruby with a transparent core; medium+ viscosity with no staining of the tears. On the nose, the wine is developing with notes of red brambles, red rope licorice, leather, red flowers and purple flowers, and stony minerals. On the palate, the wine is dry with medium+ tannin and medium acid. Confirming the notes from the nose the finish is medium+. Textbook, Grenache forward CdP that’s showing quite beautifully. Medium deep ruby garnet with wide garnet rim . Open and classic on the nose with tobacco , grafite , herbal , mint , seaweed and some mixed summer fruits . On the palate this is quite fresh and slightly lean in style , quite rustic , bitty tannins and a herbal touch. Mixed summer fruits on the mid palate and a reasonable earthy tobacco tinged finish . Celebrating 25,000 followers on Vivino, with this fabulous sweet wine from Bordeaux.

Dark gold in color.

Full bodied and smooth with high acidity.

Sweet on the palate with great complexity and mouthfeel.

Showing lemons, red and yellow apples, tropical fruits, spices, caramel, honey, peaches, lemons, citrus, turmeric and honeysuckle.

Long engaging finish.

This 17 year old Sauternes is drinking exceptionally now, although it will continue to age nicely in the next 30 to 50 years. A delicious dessert wine from a great vintage.

Rich and fruit forward. Beautifully balanced with enough acidity to balance the high sugars. Showing a wonderful nose that I kept smelling on for a long time.

Already showing great complexity, sweet and expressive. Opulent with great elegance.

Wine Spectator 98 points. Wine Advocate 100 points.

I've had many different vintages of this wine, and it is always very impressive.

Good by itself as a dessert wine, or with food. I paired it with blue cheese.

A blend of 80% Sémillon and 20% Sauvignon Blanc. Aged in all new French oak barrels for 30 months.

Aldo Vaira took control of family vineyards in 1968, he was just 15 years old. Today, G.D. Vajra consists of 150 acres, mostly around the commune of Barolo. Ruby with a rich bouquet of fruit, spices & floral notes, fruit from several vineyards, aged 26 months in Slavonian oak. On the palate flavors of cherry & raspberry with notes of pepper, cinnamon & floral, slight earthy notes. Long finish, nice balance with fine soft tannins ending with earthy floral notes. This bottle of 1976 Chateau Lafite Rothschild was cellared in a wine cave part of its life and a modern cellar the more recent part of its life. The fill for this bottle was mid-shoulder and the label had been tattered from back when it was in the cave. Using a Durand, I was able to pull the cork intact and it was saturated but seemed to have done its job. The color was good and the wine was sound; in fact, it was very much alive and full of character! Opened about four hours prior to service and decanted for sediment (of which there was plenty). No formal notes. At this stage in its life, the 1976 Lafite pours a garnet color with an orange rim. The nose is straight up old-money. Classy aromas of desiccated red cherries & red currants, dried tobacco leaf, graphite, a mix of organic and inorganic earth, leather and dried baking spices. On the palate, the structure was still quite palpable with tannins till present and acid doing its job with aplomb. Confirming the notes on the nose. The finish is long and graceful with some nice stoney minerals. Drink now but well cellared examples could hold longer if you wanted…but if you’re even thinking about it, just open it! — 3 years ago

This bottle of the 1984 Insignia was opened about 30min before service and enjoyed over the course of a few hours. The wine pours a deep garnet with a slightly browning rim and an opaque core; medium viscosity with moderate staining of the tears and plenty of sediment. On the nose, the wine is vinous with notes of desiccated black fruits: blackberries, black cherry, Chunky beef stew, mushroom, eucalyptus, leather, organic earth and baking spices. On the palate, the wine is dry with medium tannin and medium acid. Confirming the notes from the nose. The finish is medium+. A mature wine what’s still lovely; full of secondary and tertiary notes. Presented to me double-blind. The wine pours a deep garnet with an opaque core and some rim variation; medium viscosity with moderate staining of the tears and signs of sediment. On the nose the wine is vinous with notes of cassis, blackberry, black plum, tobacco, menthol, leather, and mix of cool and warm spices. On the palate the wine is dry with medium+ tannin and medium+ acid. Confirming the notes from the nose. The finish is long. This is really delicious.

Initial conclusions: this could be a Cabernet Sauvignon based blend or other Bordeaux-styled blend or a Tempranillo based blend from the United States, France or Spain. This saw French oak so I eliminated Spain. I thought the fruit was outshining the structure…so I liked the USA over France. And, based off the appearance, I thought this probably had 30+ years of age. Final conclusion: this is a Cabernet Sauvignon based blend from the United States, from California, Napa, Rutherford; 1994. Ugh…the 1990 vintage in Bordeaux has bit me twice now recently. Really awesome stuff! Drink now through 2040+. — 7 months ago

Solid Sonoma Cab that tastes like Left Bank Bordeaux. Supple feel, dark berries, cedar, graphite, tobacco. A little eucalyptus and a little espresso. Lengthy tannins. Drinkable now and will age for some time.

Pretty deep ruby garnet , medium wide garnet rim . Aromatic and really classic with a mix or red and dark fruits , tobacco , grafite and cedar . On the palate this is quite linear , again with the red and dark fruits from the nose, cedar and grafite and quite rounded resolved tannins . Fresh acidity , good cedar with grafite length , very classic in style . Enough density and fruit to cover the rest of the structure. In a perfect place now at least in this format , and probably will be over the next 10 years . This was from an Imperial , at BBR in London . — 7 months ago

Deep, elegant Super Tuscan now firmly in its tertiary phase. Nose leans more to leather, tobacco, dried herbs and balsamic notes, with the red cherry and plum fruit clearly in the background. Medium‑plus body and acidity, fine chalky tannins; savoury flavours of dried red fruit, cedar and spice carry through on a long, resolved finish. Showing peak complexity today and unlikely to improve further with cellaring, so firmly in the drink‑now camp. — 8 months ago

Paler colour than the 76 , medium old gold colour . Quite a lot of bubbles still. This shows much more linear and mineral , quite chalky on the nose and palate but has enough fresh lemon tinged fruits to cover the bones . This is fresher and younger on the palate than the 76 . Long more focused on the finish, higher acidity . This is perfect now and over the next 5-10 years I would imagine . Very much alive and vivid for a Champagne of this age. — 3 years ago

I have tasted many 1961 over the years, this continues to be one of my favorite wines...The strange thing is that this bottle with its high necklinewas the youngest 1961 that I had ever tried, wine had an great Providence - One owner and one incredible cellar.

1961 was a magical year on the right bank; now over 50 years of age it has lost some weight but picked up elegance on the nose - wet clay, graphite/lead pencil, umami/truffle - nose candy for sure. — 12 years ago
