Definitely a wine that needs to be served closer to room temperature than the fridge and let breathe just a bit. Complex bouquet comes alive as it warms with key lime pie, caramel apples, white flowers, and Chantilly cream underlaid by chalky marl aromas. Quite a deep colour , deep garnet , with a medium wide garnet rim . Needs time to open , quite discreet but quite deep and dark on the nose , with some blackberry tinged , liquorice , dark cherry , earthy sous bois . This opens up after a while to show more floral influences, lighter , redder fruits . On the palate this is quite dense , with a blackberry , dark cherry hint , earthy , mineral with quite grippy tannins . Good volume and density . Balanced acidity and earthy , mineral tinged finish. This needs time and improved quite a lot with air but really needs a few more years in the cellar , maybe come back in 5 years and will last well at least another 10. Promising . — 3 days ago

I met Toby Bekker in Australia who I thought his Grenache and Syrah wines were made in a Burgundian style. I asked him about his time in Burgundy and if that influenced his wines. He said, there he learned what not to take from grapes/wine. This is a shinning example of what he was taking about.
The fruits are perfectly ripe, floral & extracted. Cherries, strawberries, pomegranate, rhubarb tones, plums, haunting raspberries, light & softly layered baking spices- clove cinnamon, nutmeg & vanillin, understated red cola & licorice, excellent oak use-barrel powder, hints of dry herbs, understated dry twig, hints of grilled meats, notes of dry tobacco w/ ash, soft used leather, red flowers, red & pink flowers, excellent acidity and a well balanced, softly waking tension with grace and elegance on the two-minutes that lands gently on spice & earth.

One of the best CDLR’s in the biz showing beautifully tonight with an ultra complex and seductive bouquet of candied red cherries, rose petals, coffee beans and game meat. The palate is luxuriously silky with obvious grand cru and old vine concentration, particularly for the vintage, and there is beautiful purity and elegance to balance its power. Its spice and mineral inflicted finale just keeps on going. 07 Burgundy are in such a great spot. — 15 days ago
