Popped and poured; enjoyed over the course of an hour. The 1981 pours an amber color with medium+ viscosity. On the nose, the wine is developing (still!) with notes of ripe apricots, orange peel, honeysuckle, marmalade, candied nuts and crushed rock. On the palate, the wine is sweet with medium+ acid. 2015 vintage. 37,5 cl bottle. Golden colour. Intense perfume with caramel, roasted nuts, dried pineapple and orange peel. The idea is a more accessible style of Sauternes that could work as an aperitif, but after 10 years, this has beautifully evolved into something more complex and rich, while refreshing acidity keeps the sweetness in check. Brilliant silver-straw. Lime zest, honeysuckle, succulent herbs and chalky minerals on the incisive nose. Dry, tightly focused and lithe on the palate, offering intense citrus and orchard fruit flavors that reveal a hint of waxiness and a refreshingly bitter quinine note. 2016. Our clean out the fridge charcuterie dinner. Blue cheese, apples, figs, prunes, walnuts all paired well with this unctuous wine as expected. We love Sauternes with Foie, but we didn’t have any on hand 😏, but we did have the end of a chub of good braunschweiger which went really well too. — 4 months ago
