Les Côtes Saint-Joseph Syrah 2017

This is a terrific and open St. Joe. Lively nose has cured beef, juniper, bright purple berry fruit, crushed granite, and whiff of wood smoke.nice flavor concentration in a smooth and lithe frame, tannins super soft. Goes down very easily. — 13 days ago

Backus Vineyard Cabernet Sauvignon 1997

Yeah it’s a big pour, but it’s decanting as well so it’s a sipper. Fantastically aged, look at that cork.

Cuvée de Très Vieilles Vignes Charmes-Chambertin Grand Cru Pinot Noir 1993

This comes from some of the oldest vines in Burgundy, and in SC’s words, “from unmatched genetic quality”. It really shows - the concentration here was just incredible, with velvety textures that just caressed the palate, and length unending. Frankly, it’s not the easiest drink at this stage but I can’t deny how impressive it was. Still unyielding despite being opened nearly 12 hours before dinner then decanted. Intensely dark fruited with obvious wood. Most on the table even commented that it drank like an elegant Bordeaux. Destined for greatness, but may well outlive us all. — 18 days ago

Côte de Beaune Pinot Noir 2015

2022/10. The most complete bottle of this so far - rich, varied aromatics, fully open, a bit of spice with the forest floor and red fruit — 19 days ago

Insignia Napa Valley Cabernet Sauvignon Blend 2006

What a Thanksgiving treat! Lush red fruit with hints of slate and tobacco. Long lingering mid pallet aftertaste. Deep red color. Goes good with a good Cuban cigar. Held up to a varied turkey day menu. Food and wine improved both. Outstanding 🍷🍷🦃🍷🦃🍷 — 7 days ago

Insignia Estate Grown Napa Valley Red Wine 2014

That time when Saturday Halloween costume shenanigans led to another great bottle.

No better time than the present to open that great bottle (assuming it’s not a baby). At some point during my wine evolution I realized that if I wait until the “perfect moment” to open that special bottle of wine, I might never open it. I am not going to get ridiculously carried away opening every bottle, but I am making an effort to enjoy fantastic wines soon rather than later.

The details: 87% Cabernet Sauvignon, 9% Petit Verdot, 2% Malbec and 2% Cabernet Franc and was brought up all in 100% new French oak for 24 months. This wine comes from six estate vineyards across Napa Valley, from St. Helena to Oak Knoll District. Winemaker Ashley Hepworth.

Rule # 53 - Make the occasion, don’t wait for the occasion.

Agreed! Plus there’s nothing worse than sitting on a bottle too long and being disappointed with the showing when you finally open it.

@Eric that’s a really good point about waiting too long!
