This is far too young but when I have a chance to look in on Cheval Blanc I do.

Nose shows; ripe blackberries, strawberries, dark cherries, plum, moist clays, coffee, moist herbs, roasted chestnuts, amazing florals that are red flowers, red roses, lilacs & violets.

The palate shows some nice evolution but still too young to drink. Ripe and slightly candied; blackberries, strawberries, dark cherries, raspberries & plum. Moist clays, coffee, moist herbs, roasted chestnuts, espresso, mid berry cola, caramel, cinnamon, clove, nutmeg, crazy, round, bold spice, moist tobacco, used leather, graphite, dark, rich earth, dry stone, limestone, soft oak powder notes, amazing florals that are red flowers, red roses, lilacs & violets, round, rainfall acidity, balance, mid structure/tension, grand length and a two-minute long polished finish.

Opus One

Napa Valley Cabernet Sauvignon Blend 1986

Poured into a decanter to remove sediment prior to service; enjoyed over the course of several hours. The 1986 pours a garnet color with a near opaque core; medium viscosity with moderate staining of the tears. On the nose, the wine is vinous with notes of cassis, dried blackberries, green bell pepper, tobacco, dried purple flowers, earth and fine cool and warm spices. On the palate, the wine is dry with medium (integrated) tannin and medium+ acid. Confirming the notes from the nose. The finish is medium. A solid but somewhat demure showing, particularly in the midpalate. Drink now. — 3 months ago

Double decant and pour(some fine/cloudy sediment).  A striking still dark magenta color with bricking.   On the nose:  subtle perfumed notes of dark fruit, pencil shavings, smoked meat, worn leather, tobacco leaf, eucalyptus.  Taste:  silky, balanced wine with some dried dark fruit, currants, earth, asian spice, dried herbs, and a graphite/dried cherry/coffee ground medium plus finish...lacks some depth and some still there sharp tannins gonna knock the score down.  — 3 months ago

Hermitage Syrah 1994

At this point, with this group, a Legends dinner simply wouldn’t be appropriate without at least one bottle of Chave Hermitage.

Opened about 90min prior to service; enjoyed over the course of a few hours. The 1994 Hermitage pours a slightly hazy garnet with a near opaque core; medium viscosity with moderate staining of the tears. On the nose, the wine is vinous with perfumed notes of dried brambles, dried blueberry, dried purple flowers, black olive, mushroom, espresso, leather, stony earth. On the palate, the wine is dry with medium+ tannin and medium+ acid. Confirming the notes from the nose. The finish is long and slightly sanguine. Delicious with the 5 Spice Cured Duck prepared with marinated Bing cherries, crispy shallot and Olathe corn polenta. It was such a pleasure to taste the ‘94 Chave next to the ‘85 Gentaz. Two Northern Rhône Legends working with their respective terroirs. Where the Gentaz was all about the aromatics of Côte Rôtie, the Chave was brought more of the power from the Hill of Hermitage. Drink now through 2056.

Viña Tondonia Reserva Rioja Tempranillo Blend 2012

Upon opening, this seemed a bit disjointed, with muted fruit flavors and strong herbal notes. Decanting didn’t seem to help much, but day 2 it finally opened up nicely, with nice complexity and intensity on the palate. Cherry, raspberry, cassis, bay leaf, dried Italian herbs, anise, cloves, vanilla, cedar, earth, and balsamic notes all come through. Really tasty, but maybe a bit too intense. I can see this improving with a few more years of aging so the flavors coalesce and soften a bit more. — a month ago

Popped and poured; enjoyed over the course of a two days. Better on Day 2. On the pop and pour, this bottle was backward and really seemed resistant to show much. I didn’t detect any real flaws or faults…just sort of, “meh”. On Day 2, it had opened considerably. The 2017 pours a deep garnet with a near opaque core; medium viscosity with light staining of the tears. On the nose, the wine is developing with notes of tart and ripe blackberries, currants, mixed flowers, black tea, ferrous earth and a mix of cool and warm spices. On the palate, the wine is dry with medium+ tannin and medium+ acid. Confirming the notes from the nose. The finish is medium+. Drink now with patience and through 2042. — 2 months ago

On the nose, the wine is developing with punchy notes of Morello cherry, raspberry, pomegranate, orange rind, red flowers, and a mix of cool and warm spices. On the palate, the wine is dry with high tannin and medium+ acid. Confirming the notes from the nose. The finish is medium+ and the texture is almost chewy. Opened about 90min prior to service; enjoyed over the course of a few hours. The 2001 Monte Bello pours a deep garnet with a near opaque core; medium+ viscosity with moderate staining of the tears. On the nose, the wine is developing with lovely notes of black currants, blackberries, plum, tobacco, purple flowers, an intoxicating mix of exotic Eastern spices, some cocoa, inorganic earth and minerals. On the palate? The wine is dry with medium+ tannin and medium+ acid. Confirming the notes from the nose, the finish is long and impeccably balanced. To my palate, this bottle has reached the age when Monte Bello starts to really become interesting. What a delight! Drink now with some air, through 2051. — a day ago

I recently had a conversation with a few Joseph Phelps Ambassador’s at Pebble Beach Food & Wine in April. I said, I had every vintage of Insignia back to 2006 in storage. They said, “you should really drink up the 2006.” So, I coravined an 06 last weekend, a taste. I agreed then. But tonight not the case, it shows it still has a fair amount of life. Another 5-8 yrs and perhaps plus.

My Ribcap, a definition of Medium Rare Plus.

The nose reveals floral; blackberries, black raspberries, both plums, poached strawberries, dark cherries and blue fruit notes. Melted dark chocolate, mocha, caramel, softly layered baking spices, very underrated graphite, steeped tea, mid berry cola, red licorice, limestone powder, dry top soil, dry twig, red, dark candied to slightly withering florals w/ liquid violet cola.

The palate shows well resolved, rounded, velvety M+ tannins. Nicely ripe fruits that are floral; blackberries, black raspberries, both plums, poached strawberries, dark cherries and blue fruit notes. Melted dark chocolate, mocha, caramel river, softly layered baking spices-clove, nutmeg, cinnamon stick & vanillin, warm caramel, dark Asian spices with palate burrowing heat, dry tobacco/ leather, cedar, grilled meats, very underrated graphite, sweet tarriness, black licorice, steeped tea, mid berry cola, red licorice, limestone powder, dry top soil, dry twig, red, dark candied to slightly withering florals w/ liquid violet cola, candied to withering; dark, red, blue florals wrapped in liquid violets, epic rainfall acidity, well balanced-structured-toned, elegant finish that lasts minutes and falls on earth & heated spice.

95-96 peaking.

Double decant and pour(decent sediment).  A remarkable still murky dark garnet with bricking.  On the nose:  Intoxicating perfumed notes of dark fruit, worn leather, smoked meat, touch of barnyard, tobacco leaf, mushrooms, mint.  Taste:  silky, fresh, regal, powerful wine with sweet red fruit, meaty, dried herbs, tobacco, mineral, and a earthy orange rind lingering finish with a slight tannic kick.  Amazing!!! On the nose, the wine is developing with notes of white peach, lemon curd, white flowers, lightly toasted brioche with chalk and limestone minerals. On the palate, the wine is dry with medium+ acid.
