Chocolate ganache nose sows lime zest and cedar, vanilla panna cotta, lemon tart, hazelnut, absinthe film, and orange rind across a semi-hot surface that resembles an exotic, forgotten cocktail; tea biscuit, lavender and creme caramel. An olfactory feast that endlessly inspires. Soft and warm palate with herbaceous thyme, chive, cilantro, basil afloat on vanilla-caramel, lemongrass, tea tree oil, bay, lemon zest, lime pith, and candied lemon. Cappuccino and bakers chocolate, spun sugar, dark brown sugar, apple blossom honey, treacle, baklava, pine nut, pecan, and coffee cookie. Most interesting is the layers of cascading flavors maintain their original impact while generously allowing the next to shine seamlessly. 1997 and holding up very well. Brisket, prune and baked plum, graphite sparkles, dried red currant, crumbly rose petal, cedar sawdust and baked black currant. Rich and half dried black cherry, similar with black currant, velvety thick robe of tannin, dark chocolate with dried raspberries, violets and cinnamon, fresh raspberry, mild black pepper, coffee splash and long long graphite shine. Amazed at the quality here, and stunned by the longevity.

Twice this venomous viper has evaded review. She jumps out and thrashes, coils round and inculcates. A devil of a bite too! Seductive, deceptive nose of caramel creme, rosemary, bay leaf and cinnamon roll. Palatal acupuncture ensues, as you slowly succumb to the hot cinnamon oil and scotch bonnet burn of the first phase. Phase two brings cinnamon and grilled peach with brown sugar cobbles and scotch bonnet honey. And finally the nose and close converge in satin vanilla, cinnamon, cracked black pepper and ginger. .
