These brutal TX summers can make it difficult to crave heavy meals, so some sort of grazing board with lots of options is definitely ideal.
A quick note: Even for me, opening Aubert this young is usually something I don’t even consider (aside from their Hudson). After enjoying some other 2017s that someone opened earlier this week, I was surprised at how open they were. I believe the vintage gives these wines more opulent and early enjoyment than normal.
As always, I believe this to be Aubert’s most acid driven wine. Almost spritz like. Aromatically it is a mix of bright citrus, honeysuckle, honey roasted cashews and lemon confit. On the palate, the entry shows strong acidity before it fades away. Lemon cream, ginger, copious amounts of tropical fruit and a somewhat surprising kiss of mineral/limestone. Aubert’s entire lineup is among the best, but this is normally towards the back of the pack for my taste profile (which means it’s still among the best Cali chards, in my opinion). — 5 years ago

A few fun bottles from last Friday.
I’ve had quite a few vintages of this wine and they all remain very consistent, so I won’t create a new tasting note aside from calling out the power and richness this highlighted next to a few other different Aubert’s on the table. Lauren is consistently my favorite offering from Aubert because of the profile it displays...so much concentrated fruit alongside honeyed sea salt, lemon cream and marzipan. Dessert Course, Warm Berry Cobbler, House Made Vanilla, Lemon Verbena Ice Cream.
Amazing dessert. Pairing the cobbler with the Ruinart Rosé and the Charles Heidsieck Brut Reserve as well. Both good/appropriate for the dual aspects of the cobbler.
Dessert has blackberries and raspberries with lemon and crumble on top (tiny bit of cinnamon) and vanilla lemon verbena ice cream. There are flavors here that call for Rosé & Blanc de Blanc Champange.

Medium deep pink moving toward reddish orange. Citrus melange aroma... orange, blood orange, sour key lime and pink grapefruit. Powerful weight on the palate but round and creamy in texture. The finish is awesome—long, sweet, savory, lasting almost a minute... with just the slightest hint of funky, cheesy forest-floor. Perfect foil for fresh broiled salmon with grilled broccoli and a Dijon cream sauce. So very glad I kept this wine so long before popping... far from over the hill.. could see enjoying the wine at 25 years. What a wonderful pink wine! — 4 years ago
375ml. A magnificent 30-year young Sauternes. Orange peel, molasses, caramel, ginger spice, and brown sugar. The intense flavors waltzed across the palate with grace and precision. Fresh, vibrant, and not as rich as expected. The finish lasts forever.

Lots of sour lemons, lime candy, overripe pineapple, apricots, green & golden apple-more green, beeswax, honeysuckle, butterscotch, thick & a little gluey, white spice with heat, solid structure/backbone, buttered popcorn, cream, lots of chalkiness, volcanic minerals, oak char, limestone with fruit blossoms, jasmine & yellow lilies. The acidity is round & nicely executed. The long round, well balanced, polished finish is delicious and persists for minutes.
Over chilled it, decanted it 40 minutes.
These will benefit from 5-7 years in bottle. Curious about the 17 vintage. Have additional bottles for later.

Lighter appearance but big and bold flavors - ripe yellow apples, caramelized fruits, limes, vanilla and cream. Acidity/lime keeps it from going over the top with the ripeness and richness. Moderate amount of matchstick. Drinking well now but definitely has more time to enjoy. — 3 years ago
