It’s time for my Friday's Cabernet fix. Here is a nice one from Sonoma County, California.
Dark ruby in color with a short reddish rim.
Fruity nose with black currants, cherries, plums, oak, vanilla, licorice, cloves, herbs, spices, dark chocolates, coffee, peppercorn, earth and light vegetables.
Full-bodied and smooth with medium acidity and long legs.
Dry on the palate with blackberries, black currants, plums, cooked cherries, oak, vanilla, spices, chocolates, tobacco, peppercorn, earth, green tea, vegetables and graphite.
Medium-plus on the finish with fine-grained tannins and tangy raspberries.
This 7-year-old Cabernet Sauvignon from a Double Magnum is a nice surprise. Very tasty and easy to drink.
Well balanced with nice complexity. Spicy with a nice mouthfeel.
Needs a full hour to open up properly. I used 4 decanters.
After 2 hours of airtime, it drinks like a Left Bank Bordeaux. Interesting stuff.
Could continue to age nicely in the next 5 to 10 years.
I paired it with cheeses and light appetizers.
100% Cabernet Sauvignon grapes were aged in French and American oak barrels for 12 months.
14.2% alcohol by volume.

The 1982 Cheval Blanc is a vintage that I have not drunk for a number of years, so this was a pertinent reminder of its pulchritude. It has a flat-out gorgeous bouquet with ebullient red fruit, warm bricks (terracotta), hints of liquorice and strawberry jam. It's the kind of bouquet that you could bathe in. The palate has a ripe entry, voluptuous yet exquisitely balanced, the Cabernet components of this Cheval Blanc quite expressed and more pronounced than I recall. Yet it's toying with you as it segues into a more Burgundy-like final third. Mercurial, sensual and riveting. Tasted at the 1982 Dinner at Hatched. (Neal Martin, Vinous, September 2022)

Has been a little over a year and wanted to check in. Gorgeous herbal nose and some just ripe apricot. Lifting minerals. Floral. Citrus. Just gorgeous. Really open. Wow. Palate is a grapefruit and citrus explosion. Wonderful purity and freshness. So delicate yet very powerful and deep. So tense and structured. Wonderful dry extract. Müllen at his best here. What a nose. It pops. Big peach and apricot and that purest citrusy syrup dash of honey thing. Really singing. Slate in the background but beautiful and clean fruit. Floral and almost a nougat element as well. Stunning. Palate is at once opulent and also bone dry with razor sharp 2008 acidity and cleansing minerality and citrus on the finish which really is long and delineated. This is outrageous now. — 7 years ago

I tasted the 1982 Lynch-Bages twice within a month, both at a private dinner in London and at the château, from bottle and double-magnum on separate occasions. Both vindicate an exceptionally fine 1982, perhaps a bit overlooked in a vintage full of stars. Curiously, the bottle in Bordeaux does not fully deliver the mesmerizing freshness and energy compared to the bottle in London: pencil-lead-tinged black fruit intermixed with clove and freshly-rolled tobacco. The palate is medium-bodied with firm tannins, perhaps just a little austere compared to its peers. Yet, indeed, the bottle in London exudes class and composure with a detailed, mineral-driven vintage belying that year's unseasonably warm period. Superb.
