This is lovely wine and 10 years later, it’s still not quite ready for prime time. It’s a long runner so no real hurry. The cassis and cocoa will integrate with the dark berry eventually but I’m gonna let this rest another 5-10 years to enjoy as this vintage and this wine deserves. It’s very good now. Fresh and pristine even at 10 years of age. Arguably Australia’s best Riesling - certainly in the top 3. Aromatics of lime juice with a tiny hint of TDN (paraffin in this case) and a hint of honey. Overall ultra pure with M+ intensity and a touch of peach on the palate. This could be confidentally cellared for another 5 years for added complexity. Dry Riesling doesn’t get much better than this. — a month ago

I recently had a conversation with a few Joseph Phelps Ambassador’s at Pebble Beach Food & Wine in April. I said, I had every vintage of Insignia back to 2006 in storage. They said, “you should really drink up the 2006.” So, I coravined an 06 last weekend, a taste. I agreed then. But tonight not the case, it shows it still has a fair amount of life. Another 5-8 yrs and perhaps plus.

My Ribcap, a definition of Medium Rare Plus.

The nose reveals floral; blackberries, black raspberries, both plums, poached strawberries, dark cherries and blue fruit notes. Melted dark chocolate, mocha, caramel, softly layered baking spices, very underrated graphite, steeped tea, mid berry cola, red licorice, limestone powder, dry top soil, dry twig, red, dark candied to slightly withering florals w/ liquid violet cola.

The palate shows well resolved, rounded, velvety M+ tannins. Nicely ripe fruits that are floral; blackberries, black raspberries, both plums, poached strawberries, dark cherries and blue fruit notes. Melted dark chocolate, mocha, caramel river, softly layered baking spices-clove, nutmeg, cinnamon stick & vanillin, warm caramel, dark Asian spices with palate burrowing heat, dry tobacco/ leather, cedar, grilled meats, very underrated graphite, sweet tarriness, black licorice, steeped tea, mid berry cola, red licorice, limestone powder, dry top soil, dry twig, red, dark candied to slightly withering florals w/ liquid violet cola, candied to withering; dark, red, blue florals wrapped in liquid violets, epic rainfall acidity, well balanced-structured-toned, elegant finish that lasts minutes and falls on earth & heated spice.

The 05 vintage is basically perfect fruit etc…

This started a bit slow from an hour decant. It really pick up steam w/ the Waygu Ribcap.

The Bordeaux elegance & earth profound. The fruits are floral-laden. Dry blackberries, raspberries, both plum, with skin, dark cherries, dry strawberries, baked rhubarb, hints of raspberry, dark chocolate bar, light caramel, dark spice with a little heat, dry limestone. topsoil, dry riverstone, cigar box with ash, old used leather, dark forest floor with leaves, clove, touch of cinnamon, vanilla and a pinch of nutmeg sweet graphite, used charcoal, black tea, mid berry cola dark wuthering flowers, hence of lavender and old violets, perfect around acidity with a well-balanced structured, evenly tensioned finish that last minutes and lands on dry earth and spice with florals — 6 days ago

This Saxum White Blend is unique & delicious. Cheers, Justin. 55% Grenache Blanc, 28% Roussanne & 5% Chenin Blanc.

The nose is a blood orange/tangerine that has orange at its center. White citrus’s-lemon-grapefruit, tropical melons, overripe yellow stone fruits. steeped sun tea, notes of marmalade fruit bits, brown sugar-molasses, caramel hues, some moist herbs, lite white spice, limestone, volcanic minerals, withering yellow lilies and carnations.

The palate is round, juicy and a bit viscous. Gentle oxie notes, Blood orange/tangerine that has orange at its center, white citrus’s-lemon-grapefruit-lime reduction, tropical melons, some pineapple, overripe yellow stone fruits. steeped sun tea, notes of marmalade fruit bits, brown sugar-molasses, caramel hues, some moist herbs, lite white spice w/ palate heat, saline, brioche, well toasted bread crust, frothy cream, white pepper hues, maple tree bark, limestone bits, volcanic minerals, withering yellow lilies and carnations, acidity is off the charts, rich, lush, well balanced, nicely toned structure with elegance for days and lasts minutes landing on darks sugars & spice.

What a beautiful wine experience. Loving it. This wine rips your mind apart. It is a heady wine. Drink now & for 5-7 yrs. — 2 months ago

Just phenomenal. And I am a Graach guy at Prum. More never and energy than WS. Nose is so ethereal. Lime zest, first of season green apple skins, slate, apricot, phyllo dough. So expressive. Some sweet rubber as well. Like brand new rubber boots. Palate is so elegant and concentrated but light yet almost middle weight and weightless. Huge fruit soak. Such purity.
