1989 vintage. Opened but not decanted. Tasted after one hour open. More structure than the 1990 version tasted side-by-side but leaner with slight, vegetal tones, less fruit and better tannic structure than the 1990. Couldn't find this in my Delectable reviews but feel like I've tasted this once in the last 6 or so years. Apples (1990 version)/Oranges (1989). As with the 1990, the 1989 is in a good place for another few years in the 750ml format but if you want to truly visit a 35+ year old vintage at the height of its' powers, opt-in for a large format experience. 10.10.25. — 7 months ago

Here is the recipe. Try it sometime.

4-6 thick cut bone-in pork chops

- 1 cup hoisin sauce
- 1 1/2 tablespoons of sugar
- 1 1/2 tablespoons of Tamari soy sauce
- 1 1/2 tablespoons sherry vinegar
- 1 1/2 tablespoons of rice vinegar
- 2 scallions chopped
- 1 teaspoon Tabasco Sauce
- 1 1/2 teaspoons of Lee Kim Kee brand chili sauce
-1 1/2 teaspoons of ginger finely chopped (I triple this)
- 1 1/2 teaspoons of garlic finely chopped (again.
I double this)
- 3/4 cup of cilantro finely chopped (no stems)
- 1 tablespoon of sesame oil

Just opened, 14 years in the bottle after couple of years in the barrel! Still tasting well, young & juicy, should easily last another decade, but nice now. Deep Ruby, dark fruits, spice, complex nose. Palate reflects juicy rich berry fruits, well structured harmonious wine. Fine soft rich tannins, long finish ending with fruit, tobacco and earthy tones. Dark garnet colored with a slight brick colored meniscus on the edges. Dark fruit, cedar, black olives and leather on the nose. Bold tastes of black plums, figs, cherry cola, and licorice wrapped in silky tannins and perfect acidity. A great finish. Kudos to my friend Steve Reynolds for making such an unbelievably great wine.
