We really wanted to love this, but alas, we think that around 2012 was when Caymus decided to focus on an à la carte presentation, which makes for quite a shallow encounter.
They have tapped into the logic of the Skinner box operant conditioning. We humanoids press a lever (in this case pull a cork), and a one-night-stand promptly arrives in our glass. Us peeps tend to follow the crowd (I present myself as exhibit A), but when you taste this, it makes a splash, but flatters to deceive.

1975 out of magnum and from a leaky cork . Procured it from a collection. Mature with notes of brioche , kumquat . Apricot ,Chamomile , white flower ,lychee, and oyster shell. On the palate it’s exotic and explosive with vibrant ,apricot , papaya , caramel, nuts ,tons of dry extract some Sauternes like notes . One of the best 1975s I have had from a leaky cork. Bright golden color. Aromas of tropical fruits, white flowers and sea spray. The palate leans more toward pear and unripe peach with a pleasant herbal note on the finish. Mouth filling texture, medium body and crisp acidity. There is a bit of weight (pleasant) but it’s not over the top. Still fresh (opened almost five years past the vintage date) and quite fruit forward. So interesting! — 20 days ago
