Lots of powerful cherry and stem-like notes from a standard vintage, not a glass I'd pass over.

2024/2/13. This is multifaceted, with different elements emerging and submerging repeatedly over dinner. By turns firm and earthy, young and gangly with a touch of pack showing, and wildly aromatic, as is typical for young Chevillon wines. This Cailles in particular showed strawberry and watermelon coulis, cherry, spices such as cardamom and sweet game. On the palate it’s fleshy, broad and on the low side in acid, but that’s relative - though still tannic and a bit awkward, it’s balanced and enjoyable — a month ago
Medium Ruby color with aromas of red fruits, spice and smoky notes. On the palate flavors of cherry, raspberry and currants with black pepper, oak and tobacco notes. Fine tannins, medium+ finish ending with fruit, spice, toasty oak and mineral character. Nice! — 3 months ago

Lestage 2010, a bit of aging on it. Nicely integrated now. Tar, cedar and black currant on the nose. A nice meat juice and truffle note is lurking in the back. The palate is not the broadest or the most impressive but shines with its acid drive, its nice peppery notes, its bright black currant touch and its polished tannins that are now well integrated. There is a nice bitter note blossoming over a finish that sports some black currant and peppery touches. It's a good wine and it has still some time ahead, it's still has a young wine profile. We paired with duck confit and cooked apple, a great pairing. — 3 months ago

Burnt tire reduction blows off after one hour. Sturdy wine. Saturated/decently extracted but not a fruit bomb in the least. Lovely with polenta and grilled pork chops. Probably improve greatly with about 3 years in the cellar. — a month ago
