My favorite Macon Chard. This wine drinks so much higher than its cost. Green apple, lemon curd, used oak, acidic, full bodied. Excellent with cheese, cream sauce. Love to pair it with an Alfredo Chicken pizza. — 6 months ago

Wanted to drink this after listening to Dominique’s IDTT interview. Found the best nationally priced bottle in Pasadena and it showed really nicely, particularly after being open for something like 4 hours. I like his winemaking approach here, which doesn’t seem to be about elevating it beyond its provenance. It’s a delicious, mineral wine that would crush with shellfish and was lovely in the afternoon along with The Trip to Spain. — 8 years ago

Opened a few hours prior to service and enjoyed over the course of an hour. The 1996 Asili, Riserva pours a deep garnet color with a near opaque core; medium+ viscosity with no staining of the tears. On the nose, the wine is developing with lovely notes of Morello cherry, red flowers, some tar, leather, a touch of truffle, dry gravelly earth and a mix of cool and warm spices. On the palate, the wine is dry with medium+ tannin and medium+ acid. Confirming the notes from the nose. The finish is long. A great pairing with controfiletto di wagyu. Plenty of life left in this. A solid proof why you should age your Bourgogne wines. A “simple” Village Lieu-dit (above La Tâch) is finding itself in a wonderful stage in life near 10 years past harvest. Just let it dust off its shoulder and catch your attention as it opens up with a toffee like red fruit character, dried roses, sous bois, truffle, spice and rocks before slowly walking out with a graceful posture. — 6 years ago
