My last of three.

The 05 vintage is basically perfect fruit etc…

This started a bit slow from an hour decant. It really pick up steam w/ the Waygu Ribcap.

The Bordeaux elegance & earth profound. The fruits are floral-laden. Dry blackberries, raspberries, both plum, with skin, dark cherries, dry strawberries, baked rhubarb, hints of raspberry, dark chocolate bar, light caramel, dark spice with a little heat, dry limestone. topsoil, dry riverstone, cigar box with ash, old used leather, dark forest floor with leaves, clove, touch of cinnamon, vanilla and a pinch of nutmeg sweet graphite, used charcoal, black tea, mid berry cola dark wuthering flowers, hence of lavender and old violets, perfect around acidity with a well-balanced structured, evenly tensioned finish that last minutes and lands on dry earth and spice with florals — 4 days ago

Boxing day treat with the wife. Pretty much the quintessential "claret." Maybe slightly faded now and on a slow path away from excellent but still lots to enjoy and i love drinking a wine with some history! Had the Lafite from the same vintage and that was slightly more my taste. Paired amazing with roast pheasant. — 3 years ago

Gave this 45 min slow ox to really open. On the nose: peach, soft ginger, limestone, orange, just so intensely aromatic. On the palate: fantastic acidity, good salinity, mulberry leaf, limestone, peach...wow, love that density paired with the zip. Another absolutely stunning showing. — 5 years ago

Consistent notes from February 2019. Molasses Caramel etc and ultra smooth. A top quality rum from Nicaragua. Great minerality from all the old lava flows in that country where the sugar cane grows. 18 years old. — 6 years ago

Medium yellow color. Tropical and vanilla on nose. Oak With something I can’t distinguish.. maybe some salinity? Bright pineapple. Then rich buttery creaminess. Slight vanilla into an oak finish. Slightly dry — 6 years ago

Sommelier recommended Barolo, which was definitely the right course of action picking our way through a wine list in Capri!
Excellent selection. Light, delicate, very subtle fruit notes and taste. Earthy, leathery with red fruits.
Passed our usual “test”…. we had to slow ourselves down from drinking it too fast 👌

The 2005 Latour is a huge wine predestined for long-term aging. Noticeably deep in color, it has a showstopping bouquet with intense black fruit, graphite and touches of dried blood and tobacco as it considers moving into its secondary phase. But that's going to be slow coming...it's in no hurry. The palate is medium-bodied and unapologetically classic in style. I notice this bottle is a little grainy in texture, the salinity perhaps heightened as it enters adulthood. The finish has a tangible sense of tension, but it remains backward and swarthy. Immense. Served this beauty on 2 occasions with Vinloq Preservation

DAY 1
👃Precocious yellow fruit (grapefruit and lemon) and green apples, flinty minerals, white pepper, and grassy herbals
👅Lemon oil with white pepper and spirited minerality. The fruit is more round and more restrained than on the nose.
Salty. Great acidity. The oak treatment is spot on. Long dry, mineral laced finish. So good

The remaining wine was Slow Decanted in my refrigerator and finished a week later

DAY 7
Such a glorious nose on this burgundy. Really delightful. White flowers and peach and even some tropical fruit notes. Flinty and expressive. Totally lovely on both occasions

I knew this was likely young but I was curious to try my first bottle. It's clearly drinking well now but it's going to be stellar with more bottle age.
I am looking forward to revisiting another bottle in time🥂

Smells like a spiced pastry

Lively! Red stars dance across the tongue for only a meaty mingling moment, before the tannins start smacking every part of the mouth, up, down, left, right, Jab, Jab, Ka-pow! Those knock out tannins longer on and on.. and on..
Wish I had bought 2 bottles, this needs at least 5 years to relax those teen tannins.
I mean, don’t close your mouth for too long on these tannins, as they act like a vacuum and super glue. You’ll never get your jaws apart.. — 6 years ago

Made by superstar winemaker, Randy Dunn, of Dunn Vineyards, the 2017 ‘Feather’ by Long Shadows is a masterful effort from this exciting warmer vintage in Washington. Once on the nose there is a lovely round core of toasty oak that wraps around the rich dark fruits, sagebrush and chocolate fudge aromatics that all meld in the glass. The palate is silky smooth, revealing a round and generous mouthfeel. The seamless effect created mid-palate is utterly fantastic. Black currants and blackberry cordial dance with shades of Black Forest Cake and espresso bean on this highly complex palate. This finishes long with dark fruits and a beam of minerality. While enticing to savor now, the 2017 ‘Feather’ will have a long life ahead of it. If enjoying in its youth, be sure to afford a two hour decant prior to enjoying. Drink 2021-2040- 95 — 6 years ago

Château Lynch-Bages 2023 – Pauillac, Grand Cru Classé, BDX, France 🇫🇷

Overview
A powerful, structurally driven Pauillac showing serious depth and long-term ambition, built on a 71% Cabernet Sauvignon–dominant blend with 22% Merlot, 4% Cabernet Franc, 3% Petit Verdot support. The wine carries muscular architecture, dark fruit density, and firm tannic authority, currently showing some youthful rough edges but clearly positioned for future greatness with proper cellaring.

Aromas & Flavors
Blackcurrant, cassis liqueur, blackberry skin, graphite, cedar plank, crushed gravel, tobacco leaf, dark cocoa and subtle savory spice.

Mouthfeel
Full-bodied with firm, youthful tannins, strong mid-palate grip, vibrant supporting acidity, dense core concentration, and a long, structured finish that signals serious aging capacity.

Food Pairings
Dry-aged ribeye, grilled lamb chops, beef short ribs, rosemary-crusted venison, aged hard cheeses, slow-braised meats.

Verdict
A high-potential Pauillac still in its formative phase. The structure, depth, and terroir signature are undeniable, but integration will require time. A climber rather than a polished performer today, patience will be rewarded handsomely.

🍷 Personal Pick
This feels like a future star in development, powerful, slightly raw, but absolutely loaded with upside. Not a wine for instant gratification, but one that will evolve into something truly special with time. I’d happily cellar this and revisit around 2029 when the polish finally matches the horsepower. — 9 months ago

From a great old looking bottle with a mid shoulder fill. Cork is fully saturated and the crud under the capsule had formed a strong seal. Slow-ox’d for a few hours, then decanted for an hour or two before taken to L’Escargot in Carmel. Amber tawny rims with a reddish tawny core. Crazy nose right from the start. Notes of sweet black cherries, tobacco leaf, plums, black pepper, ash and crusty wood, pencil shavings, some just unwrapped cigar and some menthol. Silky in the mouth with firm structure and soft but present acidity. Long and memorable finish. Outstanding performance over several hours. — 6 years ago

Happy Father’s Day! Wonderful pull by my father in law.

I’m a big fan of this winery as you don’t see them around very much. Such high quality with impeccable wine making. Slow ox for 1-2hrs. 95 merlot/5 CabFranc. Espresso and dark cocoa dusted black cherry, ripe blackberry and currant aromatics...intoxicating. So soft, yet ripe fruit, on the palate. Cherry swisher sweets, baked mixed berry figs, and still tart red and black fruit. Can’t believe how tart and ripe the fruit is even at 13yrs. Outstanding. — 7 years ago
