Unfortified, aged under flor single vintage and single vineyard Palomino Fino.
Closer to Jura in character than a ‘usual’ solera aged Fino.
Fresh, vibrant, racy. Clearly oxidative with yeasty & chalky notes, dried herbs but also some shy pear. And loads of salt!
On the palate this is crisp, fresh, bone dry and mineral. Powerful yet with nice freshness & balance. Chalky, salty, with some pears wrapped in bacon, olive brine and whiff of chamomile in the long finish.
I was not convinced upon opening and on day 1. The day after this is very, very drinkable. Bring on the tapas!

What a nose! Oyster shell, lemon, chalk, a tiny salty, savoury thing too. The palate is clean, bright, broad and minerally. There is lemon, there is a pinch of salt, there is a powerful ball of a midpalate, and a strong long, powerful finish with lemon, that chalky mouthfeel, that pinch or salt and a superb everlasting smile on my face. Quite yellow gold colour , wide light lemon rim. Shows quite a lot of development . Quite toasty with roasted nuts , candied citrus peel , candle wax , ginger , saffron, curry powder, sea breeze. On the palate this is structured and quite full bodied with the nutty character , ginger and candied lemon rind , great intensity and grip , salty , balanced acidity and very long and balanced on the finish . Drinking well now but needs time to open , will probably continue at this high level for another 5-10 years and maybe even improve further — 20 days ago
Worried it might be a little natty for my taste at first but the funk blows off quickly to reveal a fragrant & expressive wine—orange peel, orange blossom, fennel pollen, pumpkin and a gorgeous salinity.
It’s a wine that really sings with seafood. Had it with Provençal Cod with olives and fennel.
Her winemaking talent really shines in the texture—particularly the finish. Definitely a lot of skin contact here, but the tannins are elegant and the finish is crisp, salty and refreshing —no graininess or bitterness.

The aromatics were typical of a Mediterranean white with flowers and minerality more so than fruit driven. Initially a creaminess to the palate which finishes quite mineral/salty. The saltiness dominates somewhat at the end which finishes bone dry. Following day a great match with fresh Pacific Oysters. — 4 years ago
