Perfect for drinking on a warm, sunny day — 4 years ago
Pale gold hue. Oyster shell nose. Crisp, crunchy, with green apples, and a clean mineral finish. Sadly, the bottle was gone in a flash, the sure sign of a good wine in our household! — 4 years ago
Lemon and oyster shell. — 5 years ago
This was bomb. Fresh, terroir driven, complex and lengthy, a true wine of place and vintage. So much textural depth and grip as well. Struck flint, crushed oyster shell, crisp orchard fruits and lemon, sea spray, loads of earth and cheese rind. So vibrant and alive. I could drink this everyday — 6 years ago
Alongside the 02 this is a pup. But what a wine in prospect. Some of that oyster shell and soft lemon on the nose. Tightly coiled but not ripe on the middle. Great balance. It needs time, but great. — 6 years ago
What a killer Vaillons. This is insane. Perfumed nose of classic oyster shell, some nice green apple fruit and Meyer lemon. Smokey, saline, refined and even some apple butter. Great aromas. So refined and clean. Almost feels like there is so much more. Palate is so epic and deep with grace, depth and refinement. Juicy and serene with a sweetness the oyster juice quality. More west coast than east coast. So pure, resonant and long. What a great vintage 2014 is. — 7 years ago
Awesome! Its shed some of the ripe and primary fruit, but still has a warm vintage generosity to it in the acidity. Captures Vaillons charming fruit and oyster shell core. Was expecting more honeyed richness but surprised by the nerve underneath the warmth of the year. Its fresh and gets going. Totally fucked with prosciutto wrapped asparagus, boiled taters and sauce Mornay, one of the top pairing of the year so far. — 3 years ago
Lovely, one of the few Cabs that can be consumed alone. — 4 years ago
Cherry 🍒 lollipop on first taste! Mellowed a bit after getting some air. Smooth tannins. — 4 years ago
Oyster shell, tarragon, unripe peach. Beautiful stuff, perfect for eating shellfish. — 5 years ago
To begin, a very nice Côte de Léchet, but I think that Jean Dauvissat does this 1er Cru best.
Nose is cooked lemon, lemon pith, light/wet limestone and under-ripe white peach.
Palate has fresh, steamed lemon, crunchy oyster shell soup and lemon curd (light).
Solid wine, plus 2016, nice QPR. — 6 years ago
Red fruit leather, fresh sweet tarragon, smoked red currant, pressed dry cassis, a slight oyster shell to light purple olive. Baked brick and slight red pepper flake on the long finish. — 6 years ago
Medium gold. Heavy in the glass. Opened decanted for an hour. Knockout nose. Notes of lemon, white stone with some oyster shell, and a bit of honey develops over time. Rich luscious fruit in the mouth. Acidity hides in the first few hours, then powers up. Great juice. — 6 years ago
With madame vo Vietnamese garlic noods and soft shell 🦀 — 4 years ago
Has a roasted red color to it. The nose is velvety, nutty, and tart. On first sip, I get deep red fruit flavors with some smoke and pepper. Some mulling spices almost. I'm getting black currant, cherry, hint of honey. Has like a cedar taste on the back of it it. It's complex but smooth. Very little tannins. — 4 years ago
Rather muted nose of oyster shell, lemon and flint - awesome evolution on the palate fatty in the middle with a lingering finish. Fantastic. Competes at GC level - this one feels a bit quieter at the start, but its lingering finale completes a perfect picture. Aerate. — 5 years ago
Pale to mid Lemon in colour. Aromas of citrus, almond and hints of nougat. On the palate citrus verging on stone fruit. Absolutely delicious. Tasting more new world in this warm vintage. When they are as good as this for only $39AUD I cannot see the point in cellaring. On the 2nd night a little oyster shell and mineral on the nose. — 6 years ago

Thomas Pico is one of my favorite Chablis producers. Chalk, oyster shell, under ripe green apple. Acid High. Delicious. — 3 years ago
