It’s a decent steak wine. Not aromatic at first, needed an hour or so. Still not enough but the oak notes began to come through. Some nice fruit, black cherry, bit of spice, enough structure to counter the salt. Was very smooth while eating. — 4 days ago
From magnum. Cork and wax were a mess. Totally disintegrated and required the coffee filter and everything just to pour and decant the wine

When I’m not drinking a Napa Cab, I reach for a Jordon. Blend of 80% Cab Sauvignon, 10% Merlot, 8% Petit Verdot & 2% Malbec, aged 13 months in 100% French oak (35% new). Deep Ruby with aromas of red fruit, floral and an array of herb spices. On the palate flavors of cherry, blackberry and fig with oak, vanilla spice, leather and cacao notes. Rich fine tannins, well balanced and integrated with fruit and oak. Very Nice! Will age well. Just had this with a fillet mignon, Nice! — 7 days ago
Austin Hope! 2021 Paso Robles Cabernet Sauvignon!!!!!!!!! Delicious! This amazing wine has a beautiful bouquet that reminds me of a field of fresh lavender and lemongrass! The pallet gives us an amazing black currant, blueberry, coffee bean, as well as some chocolate and Oaky earth-tones. It has a very moderately dry finish. Opened the evening prior at 7pm and double-decanted; the bottle was left at room temp with the cork pressed lightly back into the neck until service. The 2000 pours a deep garnet color with a near opaque core and a slightly water rim; medium+ viscosity with moderate staining of the tears and some sediment. On the nose, the wine is vinous and showing some real power with a compelling combination of ripe and desiccated fruit: dark brambles, cassis, leather, dill, olives, spiced meat, tobacco and soft baking spices. On the palate, the wine is dry with medium+ tannins and medium+ acid. Confirming the notes from the nose. The finish is long and whoa is it ever delicious. This has to be one of the wines of the vintage. Drink now through 2040. — a month ago
