1.5 hour decant(lots of chunky sediment). A medium dark murky ruby red color. On the nose: YUM... aged perfume with blackberry, eucalyptus, cinnamon, toasty oak all jump from the glass!! This wine is made by Dan Standish who started his career by traveling all over the world learning the skill of winemaking. He returned to Australia to make wine at Torbreck. After making Torbreck, he starting his own project. This wine is produced from a vineyard with 100 year old vines with a yield of only a 1/2 ton on fruit per acre. In comparison to quality Napa producers, their yields are 2-3 tons per acre. Dan is absolutely one of the very best producers in Barossa.
On the nose, mulberries, olallieberries, blueberries, blackberries, black raspberries, black plum, plum, blackberries, black cherries, dark berry cola, vanilla, dark spice, black pepper, dry crushed rocks, limestone minerals, soft leather, saddle-wood, coffee grounds, black licorice, dark, rich soil, lavender and violets.
The body is full, rich, ruby, lush and very inky. The texture is elegantly sexy. The 06 is still youthful & fresh. It still needs more time but, it’s delicious tonight. The length, tension, structure and balance are just coming into it own. mulberries, Olallieberries, Boysenberries, blueberries, blackberries, black raspberries, black plum, plum, raisins, blackberries, black cherries, dark berry cola, vanilla, dark spice, black pepper, dry crushed rocks, limestone minerals, soft leather, saddle-wood, coffee grounds, black licorice, dark, rich soil, purple flowers, lavender and violets. The acidity is round and beautiful. The finish is long, thick, ruby, lush, elegant, well balanced with deep heat penetrating dark spices that rise off the palate and lasts several minutes. The 06 is still 5 years from it peak.

Main course is a Beef Tenderloin Roast with Rosemary, Crispy Duck Fat Potatoes, Sautéed Greens. The beef is among the most tender (cut it with a fork) & flavorful we’ve had.
From magnum. The nose shows; dark currants/cassis, blackberries, dark cherries, black raspberries, plum, anise, dry soils, dry crushed rocks, some graphite, cigar, dark, rich earth, blue/purple fruit cola, very soft dark spice with blue and purple florals set in lavender.
The body full, lush & thick. The tannins, rounded, tarry and velvety chewy. The structure & tension have hit its stride but, a little leaner than I’m used to in a Phelps Cabernet. The length and balance are exactly what I expect from them. It’s elegant, ripe & juicy. Dark currants/cassis, blackberries, dark cherries, black raspberries, plum, anise to black licorice, cinnamon, soft clove, vanilla, nutmeg, dry soils, dry crushed rocks, moist clay some graphite, cigar, leather, limestone, dry herbs, dark, rich earth, blue/purple fruit cola, very soft dark spice with blue and purple florals set in lavender. The acidity is a gentle rain shower. The long finish is delicious and persists into a dark spice.
Perfect with Hedy’s Boeuf.
Wine is peaking in Magnum with another 5-8 years ahead.
The “Truth” which, is the very bottom, concentrated part of the bottle is a 9.3.

A great example of what a great winery can produce from a not so great year. Soft notes of coffee beans, wet stones, and blueberries. Pronounced but lush and velvety tannins on the palate (although not as velvety as 2011). Oaky and leathery finish. — 8 years ago
