Cibonne

Côtes de Provence "Cru Classe" Rouge Tibouren

🐟 What would you pair with grilled swordfish?

🍇 Tonight we’re opting for a rosé based almost entirely on the Tibouren grape. When it comes to Tibouren, Clos Cibonne is always an exceptional choice. 👌

Clos Cibonne is an iconic producer in Provence, France 🇫🇷 considered a guardian (and certainly a champion) of the ancient Tibouren grape, a rare variety with roots linking back to Mesopotamia.

🌿 Tibouren has a wild, rustic structure and is often used in the production of pale, perfumed, herbal, and unmistakably coastal rosés.

🍾 This particular bottling is the “Cuvée Spéciale des Vignettes” made with fruit coming from some of the oldest Tibouren parcels on the Clos Cibonne estate (60+ years in age), lending depth and complexity and a runway for serious longevity.

🥂 Clos Cibonne also holds a coveted title as a “Cru Classé” wine based on the 1950s classification within the Côtes de Provence AOC. Its wines are among the most admired in the region.

🪵 Something that sets this rosé apart is that it’s aged under a fleurette — a thin veil of yeast (similar to the flor in Sherry) — in large, neutral oak foudres, creating a savory, textural, almost oxidative nuance that’s distinctively delicious.

🍽️ It’s a beautiful pairing with our grilled swordfish over thinly sliced heirloom tomatoes , cucumbers 🥒 , arugula and feta topped with a caper-olive relish.

🍓 The delicate red fruit, savory, dried herb (garrigue) and saline elements of the wine complement the flavors of the meal in wonderful harmony.

Cheers to the practice of food & wine pairing — may it be a lifelong endeavor!!

Always enjoyable. For me, it has just a little more character than others from Provence.

Château de Beaucastel

Coudoulet de Beaucastel Côtes du Rhône Red Rhône Blend 1988

So, initially I thought this was nowhere near the 1990 Marcoux CdP, and this is Côtes du Rhône (WHAT????), but for a 38 year old CdR, it’s pretty fine, zero tannins, definitely lower alcohol (label says 12.5% ABV, but I’m not buying it?!?!), but no noticeable ABV and smooth and suave, honestly, I attribute the great showing to the 1988 vintage!!? — a month ago

Côtes du Jura Poulsard Blend 2020

Brilliant wine. So fresh, tart berries, bright flowers, stone, some herbs, mouth watering acidity from fruit flavors, apple, berries, cherries, hint of tropical fruit. So good with food. So good on its own. This is how I remember more Beaujolais tasting 10-15 years ago. — 6 months ago

so much bang for the buck - reminds me of when southern Rhône used to be affordable... captivating wine: gorgeous dark ruby color, deep reservoir of black & red fruits, pepper, garrigue and exotic spices. Composed, graceful, med bodied palate, beautiful balance w/bright acidity carrying all the flavors thru long smooth finish — 15 days ago

Côtes du Rhône Brézème Syrah 2000

[@Delectable Wine, this bottling has “Vielles Vignes” on the top of the front label, whereas the 2001 I also opened has no such designation.]
This lovely Syrah from Brezeme was made from virtually abandoned super old vineyards, with Eric Texier essentially first saving the old grapevines and then making great under-the radar French Syrah from these super old vines (it always helps that Eric is as nice a guy as you’ll ever meet)!! These wines are unfiltered, with simply incredible acidity, low ABV (12.5 to 13%), classic black olive, savoury, faint smoky aromas as well, still very fresh and crisp, lingering finish, this bottle seems mature, but holding well. I actually purchased 11 bottles of this 2000 on WineBid around 2003/2004, Eric had quickly attained a ton of notoriety and respect on various online wine sites, including West Coast Wine, and a fair amount of people on that site (not me, but a close friend was active) purchased these early Brezemes, opened a bottle, and were (their words, not mine) overwhelmed by the very high acidity, so these wines were being dumped on WineBid for less than $10/bottle — I was happy to oblige (same story for the 2001 which I’ll post on next!!
