A more tightly wound and concentrated expression of Bin 389, showcasing the same Cabernet-Shiraz framework (Cabernet for backbone, Shiraz for richness) but delivered with greater tension, density, and youthful drive. This vintage leans more serious and structured than 2022, highlighting the fascinating impact vintage conditions have on balance, ripeness, and extraction in agricultural wines.

Aromas & Flavors
Intense blackcurrant, crushed blackberry, dark cherry, and graphite dominate the aromatics, layered with fresh cedar, cocoa nib, and subtle minty spice. The palate is compact and powerful, showing darker fruit concentration, savory spice, and tightly coiled oak structure that promises excellent evolution with time.

Mouthfeel
Full-bodied and more compact than the 2022. Tannins are firmer and more youthful, giving a punchier, more linear profile. The wine feels energetic and focused, with impressive density and length, clearly built for further integration.

Food Pairings
Char-grilled steak or venison. Slow-braised beef cheeks. Pepper-crusted lamb. Smoked meats and firm aged cheeses.

Verdict
A bolder, more muscular Bin 389 that trades immediate plushness for intensity and aging potential. A striking reminder of how vintage variation shapes personality, same blueprint, very different expression.

Hatef to open Herb Lamb Vineyard, but went to pull the 07, noticed the cork protruding so opened it & decanting. The nose is jammy with black cherry, and black berry with hint of spice in the aromatics. The palate shows black fruit with menthol, vanilla& cedar/cigar box. Presented to me double-blind. The wine pours a deep garnet with an opaque core and some rim variation; medium viscosity with moderate staining of the tears and signs of sediment. On the nose the wine is vinous with notes of cassis, blackberry, black plum, tobacco, menthol, leather, and mix of cool and warm spices. On the palate the wine is dry with medium+ tannin and medium+ acid. Confirming the notes from the nose. The finish is long. This is really delicious.

Initial conclusions: this could be a Cabernet Sauvignon based blend or other Bordeaux-styled blend or a Tempranillo based blend from the United States, France or Spain. This saw French oak so I eliminated Spain. I thought the fruit was outshining the structure…so I liked the USA over France. And, based off the appearance, I thought this probably had 30+ years of age. Final conclusion: this is a Cabernet Sauvignon based blend from the United States, from California, Napa, Rutherford; 1994. Ugh…the 1990 vintage in Bordeaux has bit me twice now recently. Really awesome stuff! Drink now through 2040+. — 8 months ago

Floral notes on the nose — roses, hibiscus, plus mint, and the dry fragrance of sun-bleached wood. Strawberries on the front. Medium tannic structure. Black tea high notes with hint mint on the mid palate. Citrusy finish with long acidic afterburn. My description fails in that it makes it sound like a light and floral wine. But taken altogether, this is wine is rock solid, and it hasn’t even begun to develop. — 10 months ago

Bacon fat and scorched clay on the entry followed by a broad beam of melted tannins and fig, iron, Provençal spices and lavender. 45+ second finish. Compared to a Spottswoode 06, this one seemed to have similarities but and it was over all this one has more tobacco and slightly less of the dark mature raspberry and black cherry. However, this one even after an hour was still a little disjointed and out of balance. I don't know if this is just on the decline or maybe a little bottle variation.
