Beautiful, brilliant light ruby red color. The first nose is intensely on aromas of small red fruits. On the palate, it is delicately fleshy, structured, muscular and elegant. A natural wine, with a real dense chew of fresh and juicy fruit. Open 30 minutes before tasting. The tannins are soft but persistent. To drink in 2/3 years.

My goodness is this thing singing a song I do want to hear. Medium straw with a fine mousse. Fine, tiny bubbles that go on and on. The nose is delicate and gorgeous. Apple pie, lemon tarts, and green apples. Toasted rolls, nuts, and butter. After it transforms in the glass you’ll find floral and herbaceous notes along with a healthy dose of chalk.
Solera method. While 70% of this Blanc de Blancs is from the 2015 vintage, the rest is from a perpetual reserve dating back to 1986. Straight out of Cuis in the Cote des Blancs. Two years on lees and disgorged in late 2018. The acidity is electric and the champagne is brawny in spots but never sheds it’s ballerina like poise. Extra Brut dosage with 2 g/l and the terroir speaks so clearly and honestly here.
Everything here is very clean and very precise. Minerality and salinity with a twist of lime initially. Creamy and inviting throughout, the fruit is lively. Terrific balance and depth with a long finish. A most harmonious champagne. — 4 years ago

Day 2... smoky bacon bits,, tobacco, cracked pepper, plum and blackberry. Big and bold. Classic. Dry, tannic (especially for Syrah), with rich blue and blackberry fruit. Striking fruit leads to savory finish. Paired very well with elk chili. Showed well after a 2 hour decant yesterday. Drink with decant or hold. — 5 years ago
Vintage 2013 / Wednesday Meatballsday (2) / today a house favorite Meatballs with chicory stewed in beer - a Flemish recipe / so often it is advised to open a relative simple red wine with meatballs, but why not white? This Limoux from 85% chardonnay and 15% mauzac does the trick. It has a few bottle years which gives it a golden reflection. Smell with a smoky touch, impressions of tropical fruit like ananas and a royal buttery taste. — 6 years ago
