2002 vintage. Decanted and tasted 15 minutes and 1 hour after decanting. Slight amount of sediment. Cedar, cinnamon and traces of bacon fat in the nose along with a splash of VA. The VA blew off and wasn’t there after 1 hour but was hanging out at the onset. Medium heavy body with another 5-7 years likely dropping this to medium body. Smoked meats, bigg dark plum and roasted nuts still part and parcel during. No rush to crush. 10.28.25. — 9 days ago
Opened and decanted for 2 hours before dinner and then really only opened up and truly hit expectations around the 3rd hour when paired with wagyu strip steaks.
This wine was savory tightly wound and tannic at first. Didn’t show much fruit until after the long decant and then it really changed.
With time, the fruits shown through with great complexity and great balance for the savory elements. — 20 days ago
30 year old beautiful cab. Still has some dark red fruit but more earth tones. Probably would have been best 5 to 7 years earlier — 6 days ago
Sipping Fine Wine
From makers of Sassicaia, Deep Ruby color with aromas of fresh red & black fruits and earthy floral notes, 55% Cab Sauv, 27% Merlot & 18% Cab Franc. On the palate flavors of cherry, plum & blackberry with floral, licorice, cacao and earthy notes, well integrated. Fine tannins, a wine with a solid structure, elegant and smooth, long finish, great mouth feel ending with fruit and oak. Will age well over next 5+ years. Nice! — 6 days ago
