In the beginning, it was a bit restrained yet charming and sophisticated. Ripe fruits of good quality, grapefruit, baked apple, brioche with cinnamon, ginger, chalk and mushrooms. The aftertaste is long and flavourful. Deliciously saline mouthfeel. After a few hours, it became more intense and seamless. Great structure with salty minerality, good acidity and a long linear finish.

Vintage 2017 | 100% Chardonnay from vineyards more than 50 years old. Work in the vineyard done with a horse. 3 gr/l dosage. Bio/Demeter wine. Disgorging 10/2020. Delicate and refined, smell with hints of lemon and apricot. Beautiful apple smell. Needs aeration to express itself. Balanced taste. Paired with scrambled eggs breakfast. — 10 months ago

Really nice, bold sparkler, with strong bubbles and vibrant acidity made from 100% Baga. Citrus peel and a touch of funk from age. Lively on its own, but would also make a nice spritz. — 2 days ago
