It’s no secret PYCM made incredible 11’s. Les Caillerets couldn’t have shown better tonight, fully open and giving wafting from the glass with layers of white peach, toasted hazelnut and pastry cream. The palate is impeccably refined, elegant, pure and chiseled with racy lemony acids, superb weight for the vintage and a long stony mineral inflicted finale. Pretty picture of the vineyard with all those hills in the background and sign that it was formed in 1815 the year of Waterloo. That's impressive. Tradition that is. Wine complements the food.
