Rosy amber body sports a Santa beard tupée. Even lacing molts to a gator emerging through swamp mix. Decaying Chameleon Timelapse. Mushroom tea and peach nose with persimmon, wheat bread and butter browning. Palate is honey droplet and stone dried plum. Immense with bitter paper edges.

Sonoma County Trousseau 2022

Popped and poured; enjoyed over the course of an hour. The 2022 pours a pale, slightly hazy ruby color with a transparent core; medium viscosity with no staining of the tears. On the nose, the wine is developing with notes of ripe red fruit: raspberry, strawberry, maraschino cherry, watermelon, rose water and minerals. On the palate, the wine is dry with medium tannin and medium acid. Confirming the notes from the nose. The finish is medium. This is impossibly easy to gulp down. Fresh, juicy and silky smooth. Founders Mortal Bloom: Sinister Haze: Hazy IPA
Dark gold leaning into amber with a yellow green aura around white locks. Roosters, snakes and rooster-snakes slither under curtained films and alligators backing off lacings. Sweet nose evokes white cherry and strawberry-kiwi, guava, hibiscus and pineapple, lemon, grapefruit and clementine. Less fruity palate amplifies the citrus with clementine, tangerine and kumquat in the fore and a tsunami of lemon and lemon oil reminding. Lemon grass and lemon verbena beside cannabis and sage. Hoppy happy.

San Valentino Sangiovese Blend 2017

Popped and poured; enjoyed over the course of 90 minutes. The 2017 San Valentino pours a slightly hazy, ruby color with medium+ viscosity and light staining of the tears. On the nose, the wine is developing with notes of tart, red fruit: sour Montmorency cherry, wood varnish, horse blanket, black licorice, old wood, and stony earth. On the palate, the wine is dry with medium tannin and medium+ acid. Confirming the notes from the nose. The finish is long and zippy. One of the more wild vintages of San Valentino I’ve ever had and this bottle wasn’t quite as good as the one I had a couple years back. Drink now and enjoy what nature gave to Paolo and Giampiero. — a year ago

Grapefruit juice coloration with egg white foam. Shamrock to bubble font and naive gryphon lacing. Nettle and lemon nose grows sweet grapefruit-tangerine, and Meyer-key lime. Bite-y saline-citrus of lemon proper, candied grapefruit, hibiscus, white pepper and lime zest.

Châteauneuf-du-Pape Red Rhône Blend 2006

Double decanted two nights before service. The 2006 pours a deep, slightly hazy garnet color with a near opaque core; medium+ viscosity with light staining of the tears. On the nose, the wine is vinous with a mix of desiccated fruit and funky umami notes: bruised and desiccated strawberry, red rope licorice, nori, Cherry Dr. Pepper, cracked black pepper and leather. On the palate, the wine is dry with medium+ tannin and medium+ acid. Confirming the notes from the nose. The finish is forever long and saline; it just hangs around forever. Initially, this came across as bit backward but it really gained power and character the more time it spent in the glass. Drink now with patience and through 2036. — a year ago
