Always the woodiest as this is usually 100% new wood but it’s so well integrated at this stage and yes this aged so well. Had a 98 in summer 23 that was stunning. Nose has cocoa, vanilla, wild red cherry, spice and minerals. Needs to integrate but it’s all there. Gorgeous aromatic depth. Palate is woody and so silky with gorgeous, decadent red cherry fruit and terrific freshness. So pure and yet another brilliant William wine from 2023. So velvety and the tannins are so suave. Brilliant! Can’t wait to see how it airs. — 5 days ago

I couldn’t describe this wine any better than @Will Stanley. Lemon + touch of pomelo, wet oyster shell and a touch of flintiness. Invigorating acidity, slight smokiness carries through on the palate and that tartness offsets the considerable body on this #santorini #assyrtiko. — 6 months ago

Had the 2021 in November of 2025. Fantastic wine. Black cherry on the nose for sure. Hints of plum and very dry. Paired extremely well with Greek style baked beans and Greek meatballs in a rich tomato sauce. The hint of cinnamon in both dishes made this wine stand out. Hope to have again. — 11 days ago

Been a minute since I have had this. Insane nose of phyllo dough, saline, green apple skins. some melon and also huge limestone. Palate is dense and tactile with an almost tannic presence and Chassagne like structure. Really dense and textured. Juicy and concentrated but needs air. Who says Merlot can not age. This is delightful. I would say there is just a hint of browning at the edges but this is a big glass and if I had, had this with mom at the restaurant instead of the Tor - you never would have seen it. It is rich and full on the palate. Finish is long. I think the nose is a bit muted but given its age super nice — 4 months ago
