So seamless and delicious. We had 3 forty year olds at dinner so this was a birth year wine for the majority of our dinner. Last had a couple years ago, and this remains very good. Took about 2 hours to open. Dark & dried cherries. Acid still nice and firm. Tannins still going strong but clearly softer and more fine grained. Feels somewhat unbalanced - good acid, good tannin, not enough fruit. May have missed the optimal window. Still very enjoyable. Only a touch of Brett. — 16 days ago
Salmon color with copper reflexes. Nose of grapefruit, and Mandarin peel, lemon juice, pink flowers, and petrichor. Faint Aperol on the back. Palate is explosive but not effusive. More grapefruit oil, lemon pith, garrigue, waves of saline minerality and a bright acidity that makes it go on and on. Pretty serious argument on why it deserves its reputation is the best rosé in the world  — a month ago
Not as bad as I remember it. It’s been a while though.
Slightly, bruised pear & red & green apple, lime zest, lemon pulp, some ginger white spice w/ a touch of heat, limestone mixed in volcanic minerals, crisp chalkiness, sea spray, yeasty bread dough, yellow & white spring flowers, lively acidity and a balanced & nicely polished elegant finish that last 45 seconds and lands on volcanics.

Opened several hours prior to service, the 2007 pours a deep, ruby/purple color with an opaque core; medium+ viscosity with light staining of the tears. On the nose, the wine is vinous with notes of ripe and desiccated bramble berries, strawberry, dried red flowers, garrigue, anise, leather, dried herbs and stony earth. On the palate, the wine is dry with medium+ tannin and medium acid. Confirming the notes from the nose. The finish is long. This is anything but tired and far from overblown. I’ve been surprised by a number of 2007 CdP’s lately. They have showed better balance than I expected and this one is wonderfully balanced. Drink now through 2037. — 2 days ago
