This is a lovely, crisp, dry bottle of bubbles made with a blend of Chardonnay and Pinot Noir varieties; it’s a perfect pairing for these crab cakes and arugula, with aged cheeses, contrasting and balancing the richness of the crab with great acidity stemming especially from the citrus and tart apple notes in the wine.

This wine is made using the Méthode Traditionnelle and definitely presents the yeasty, brioche notes adding depth and complexity.
