Estate Vineyards Les Pavots Knights Valley Cabernet Sauvignon Blend 1996

1996 vintage. 6% Cab Franc but 50+% Cab and remaining % Merlot. Last tasted 9.29.24 (9.5) and 8.2.24 (9.6). This specimen nice fill and halfway saturated cork. Decanted and throwing appropriate sed. Tasted 30 mins post-decant. Light-medium body. Dark cherry and milk chocolate nose. Cocoa powder and chocolate-covered cherry in the flavors. Tannins primarily on the back palate. More than holding up and getting by. This has a few more years afoot. Gonna say it again for those in the back…this is the best wine they’ve ever made-white or red. The Crown Gap has never been my favorite from them. Still solid. Also, needs 3-4 more years in bottle to integrate. 91+ with that kind of age.

The Truffle Mac & Cheese was a big hit with the crowd, I’m allergic to mushrooms.

At Pebble Beach Food & Wine 2025

The ticket to this event has a pretty big price tag. But when you consider what a Napa etc. tasting or two and lunch would cost you, you are pretty much there and there is so much more than that. It ends up having great value. It’s wine, spirits and food candy land.

Dry Creek Valley Cabernet Sauvignon 2022

Popped and poured; enjoyed over the course of two days and best on Day 2. The 2022 pours a deep garnet color with a near opaque core; medium+ viscosity with moderate staining of the tears. On the nose, the wine is youthful with notes of ripe and tart red and black fruits: currants, blackberries, tobacco, leather, dry earth, a combo of cool and warm spices. On the palate, the wine is dry with medium+ tannin and medium+ acid. Confirming the notes from the nose. The finish is long and a bit more tart than the nose previously suggested. So fresh right now. Drink now with patience; better after 2027 and through 2047. — a month ago
