Really loving this hearty (deappellated) Etna Rosso with cavatelli smothered in lamb & beef ragout. A little tannic and stilted at first. This is a wine that needs food and a bit of of time after opening to relax and unfold. So many layers here: Carob, bay laurel, baked tomato, dried Mountmorency cherries, a touch of smoke/ash. 2020 Pietra marina - Etna Bianca superiore. Golden straw coloration. From Mila, birthplace of carricante, why it’s superiore. On the nose, citrus, herbaceous, salinity and minerality. On the palate, rich mouthfeel, citrus, herbs, salinity from the sea, and a finish of herbs (tarragon?) and minerals. Interesting- combo of Chablis and Chardonnay. Paired with mushroom and spring onion mayonnaise. — 20 days ago
