This 2007 Ciel du Cheval Is hitting on all cylinders at this stage. Beautiful dark cherry notes with hints of lavender. Tannins have nicely rounded. A real treat. — 6 years ago

This is evolving nicely. Tart cherries, rock like flavor, forest, a bit of spice, flowers. Really lingers on the palate. Still has a lot of time in the bottle. — 5 years ago

Briny nose, also yeasty but not toasty, more of an austere yeast. So mineral and saline. Concentrated lemon on the palate, with more exotic citrus zest accents. Really high pitched and exciting. Needs oysters. — 4 years ago
