I’ve said it before and I’ll say it again, Champagne may be the best wine pairing with the traditional Thanksgiving meal and this NV from Paul Dethune was sublime. Pulled from the fridge and opened about 30min prior. Straw colored with an impressive mousse. About as affable as they come with a bouquet of white peaches, magnolia blooms and a whiff of brioche. On the palate it was stone fruits, citrus and minerals. Every bite of the meal begged for another sip and every sip begged for another bite. What a delight. — 7 years ago
On the nose, nearly candied; lemons & green melon, ripe green apple, lime juice, golden raisins, touch of sea spray, soft & delicate chalkiness/minerality, yellow florals and citrus blooms. On the palate, oily & creamy. The fruits are slightly candied like the nose. Meyer lemons, lime juice, green & golden apple, golden raisins, green melon balls, a touch of honey & buttered popcorn. The finish is full, round & lush. Acidity is ripping. It's flaw for me, the alcohol (15%) is a little high. It gives a slight burning sensation on the tongue & back of the throat. The pinot reveals itself late. It starts like an austere, somewhat smokey California Cab (if such a wine exists) than slowly blooms. Very underrated. — 9 years ago

Decanted for three hours. Kirsch, red currents, brambles, vanilla, baking spices, magnolia blooms, teriyaki, spice box, tobacco. Fiercely tannic still. Hard to say what the future brings but this is a drink with patience or hold wine. — 7 years ago

Showing great sense of place, this is soil first- fruit second. Steely & chalky, with a good bit of funk on opening. As it warms, the fruit blooms and you see banana, clove, a bouquet of flowers and a touch of lemon. It's multi layered but not interwoven, and the heat rises as the wine warms. OOOH. Jewel clear and leggy. More dank on the nose than I expected: the oak is a serious player here. Smooth, full, juicy and fruity on the palate. Tannins are shy but perfectly appropriate. The finish blooms delectably from rich earthy red and black fruit to caramelly vanilla oak goodness. The fruit and toffee linger with some tannin structure in mutually beneficial harmony for a long sweet finish. Blindfolded I'd guess this commanded a serious price tag from the depth, smoothness and length. $11 is insanity! If I see it anywhere in Nashville I'm buying them out. — 10 years ago

The nose is a jolly green giant. Medium-firm tannins. Medium body. I thiiiink there are floral notes, but also we were drinking it on a patio surrounded by blooms so ¯\_(ツ)_/¯

Deep red, surprisingly clear for a cab. A little clear at the meniscus, and super leggy. Strong clean oak on the nose; blackcurrant, and a smoky spicy note I can best describe as coffee+green pepper. Slippy smooth on the palate, marvelous juicy acid, and clear, reserved tannins. The palate is rich astringent red fruit: cranberries and some red cherry. As the finish blooms, a whiff of bell pepper gives way to smoky savory coffee, lingering cranberry tartness, and a pleasant hint of oaky vanilla. Smoothness, delectable acidity, and oaky depth: I'd take this $13 bottle over a lot of cabs twice the cost! — 10 years ago
