Something for the Jasper Hill Farms, “Willoughby.”

I am not much for Brut these days. Prefer Extra Brut. But I had this 375ml left before I shifted gear’s.

Having said that, this is still very sound and consistent. Think I enjoyed it more once upon a time. It seems sweeter now having a steady stream of EB.

Nice mousse. Lemon, lime pulp w/ a bit flesh, Bosc pear, red apple, yellow stone fruits, tropical fruits, quince, ginger, whipped creams, graham cracker, nougat, light & soft volcanic minerals, nice chalk powder, sea fossils, gentle saline, yellow flowers & lilies with hints of jasmine, pleasant, lively acidity, good balance, structure-tension & a smartly polished elegant finish that lasts 90 seconds and long sets on white spice-ginger.

Excellent pair w/ Key Lime Tart.

Been awhile since I’ve had this one. Always consistently good.

Beautiful mousse, bruised red apple & Bosc pear, underripe pineapple flesh, blood orange, quince, nougat, hints of white peach, white spice-ginger, whipped cream, yeasty bread dough, sea spray, speckled chalk bits, grey volcanics, limestone, withering yellow lilies/flowers, crisp acidity, well tensioned-structured, well balanced and elegant finish that last two-minutes.

Pop and pour. A majestic lite gold color. On the nose: crisp apples, lemon, almonds, floral, and honey. Taste: creamy, beautiful texture and nice acidity wine with apple, pear, lemon zest, saline, flint, and a minerally lime peel medium plus finish. YUM! Ruby core still , quite wide garnet rim . Still quite young looking . This is quite exotic at first with some Asian spice , rose water , floral hints and after a while red cherries , red currant and blackberry . On the palate this has more of the darker fruits , dark cherry , blackberry with some spicy , wet slate and , lightly herbal , tobacco notes . Fresh acidity and fine but noticable tannins . Quite long and detailed , saline with spiced tea tinged finish . Quite reserved and understated but enough fruit and mid palate to cover the structure . This is drinking well now with time in the glass , and will continue at this level for another 10 years or so . So exotic and enticing on the nose , and with great poise and freshness on the palate, really great showing. — a month ago
