I think if you read this nonsense I post, you know how I feel about this producer, past & present. This 07 is outstanding & top of its bell curve. It is so good to revisit these great vintages of Caymus Classic.

This is fresher than the 97. It is rich/lush, cassis to currents, ripe, blackberries, black raspberries, black plum, raspberries & strawberries. Dark chocolate, mocha, classic, beautiful, Caymus Classic spice that I miss dearly in their new wines, black licorice, fudge, clove, cinnamon, nutmeg & vanillin, most top soil, limestone, dry herbs, dry tobacco, barrel shavings, taut leather, volcanic grey clay, dark, fresh & slightly withering flowers, violets, beautiful round acidity, balance, structure, nice tension and elegant finish that last minutes and falls on spice and evoluted earth tones.

This bottle is in fine shape. Still strong and will last another 10 years of fine drinking. Phenomenal vintage and time to enjoy.

@Plate & Bottle Dinner

Dessert Course, Warm Berry Cobbler, House Made Vanilla, Lemon Verbena Ice Cream.

Amazing dessert. Pairing the cobbler with the Ruinart Rosé and the Charles Heidsieck Brut Reserve as well. Both good/appropriate for the dual aspects of the cobbler.

Dessert has blackberries and raspberries with lemon and crumble on top (tiny bit of cinnamon) and vanilla lemon verbena ice cream. There are flavors here that call for Rosé & Blanc de Blanc Champange.

I couldn’t pass up picking up a bottle of the “Sideways” 20th anniversary bottling of Hitching Post’s Highliner. Aside from the movie recognition, it’s a damn good Pinot, though a bit heavier in style than others. Vivid, fresh flavors of cranberry and cherry with a bit of spice. Delicious. A very tasty Cabernet Sauvignon from Napa Valley. Showing black fruits with cedar, vanilla, leather, spices, earth, chocolates, tobacco and herbs.

Bone dry on the palate, and full bodied with medium acidity.

Needs time to open up properly.
Still young and needs a few years in the bottle to mature properly.

Wine Advocate 92 points.

Spicy and tangy finish with firm tannins.

14.2% alcohol by volume.
