It's Friday, and it is time for my Friday's Cabernet fix. This time it's a Napa Valley Cab.
Beautiful color of dark ruby with a wide reddish rim.
Fruity nose of blueberries, cherries, sweet raspberries, wood, vanilla, smoke, coke, chocolates, coffee, earth, mint, spices, metals and black pepper.
Medium plus in body with medium plus acidity and long legs.
Dry on the palate with plums, strawberries, cherries, raspberries, wood, earth, vanilla, licorice, vegetables, vinaigrette, acetone, alcohol, peppercorn, leather, tobacco, coffee and dark chocolates.
Nice length on the finish with medium tannins and tart cherries.
This is a nice Napa Cabernet. Fruity with mild complexity, but not fully balanced yet. A little tart on the ending for my taste. Needs a couple of years in the bottle to mature.
This Californian Bordeaux blend needs a couple of hours to open up properly and show some tannins.
Enjoyable by itself or with food like BBQ steak. I paired it with a charcuterie board of meats and cheeses.

This week, my Friday's Cabernet fix, is from Napa Valley.
Beautiful burgundy in color with a dark purple rim.
Nice fruity nose with black currants, blackberries, cherry pie, green pepper, chocolates, tobacco, herbs, oak, vanilla, vinegrete, asparagus, licorice, earth, green notes and black pepper.
Full bodied with medium plus acidity and nice long legs.
Dry on the palate with blackberries, plums, cherries, currants, oak, vanilla, licorice, earth, spices, peppercorn, coffee, dark chocolates, tobacco, spices, black tea, bell pepper, green vegetables and herbs.
Medium plus in finish with green, firm tannins and raspberries.
This is a very nice Cabernet Sauvignon. Spicy, interesting and very complex. Still young and needs a few years in the bottle to become more harmonious. Now, it is a little unbalanced, with some bitterness, a lot of green notes, and high acidity. Too much acidity for the fruit it shows.
Nonetheless, it is very enjoyable by itself and much better with food, like BBQ Meats.
Needs a couple of hours to open up and get the tannins to show up.

It's time for my Friday's Cabernet fix. This time, a wonderful Chilean Cabernet.
Deep purple in color with a purplish rim.
Beautiful nose of blueberries, blackberries, black currants, plums, cooked cherries, oak, vanilla, licorice, earth, spices, peppercorn, leather, bell pepper, sage, peppermint, eucalyptus and smoke.
Full bodied with medium acidity and beautiful long legs.
Dry on the palate with blackberries, black currants, cherries, figs, cloves, herbs, earth, cola, vanilla, oak, spices, light vegetables, coffee, chocolates, bell pepper, tobacco, beef jerky and peppercorn.
Long finish with firm tannins and black pepper.
An elegant, Single Vineyard, Cabernet Sauvignon from Chile, with lots of complexity and fitness, but not fully balanced yet.
Still young now, but very enjoyable by itself, and better with BBQ Meats. I paired it with a cheese platter, crackers and nice company.
Grapes are grown at the foot hills of the Andes Mountains, on stony soils. 99% Cabernet Sauvignon and 1% Cabernet Franc.

Time for my Friday's Cabernet fix. I got a bottle before release and labeling from Casto Oaks Winery- here it is.
Dark ruby in color with a purplish/reddish rim.
Fruity nose of blackberries, black currants, cherries, cedar, leather, earth, vanilla, licorice, spices, mint, cola, tobacco, dark chocolates, light vegetables, pencil lead, alcohol and peppercorn.
Full bodied and bold with medium acidity and long legs.
Dry on the palate with blackberries, sweet cherries, black currants, cedar, earth, vanilla, leather, spices, bitter herbs, dark chocolates, tobacco leaf and peppercorn.
Long finish with angular tannins and tangy raspberries.
This is a wonderful cabernet from California. Not fully balanced yet with nice complexity and a great mouthfeel.
Needs 3 years to mature and balance itself out. Hugh grippy tannins are still overwhelming, which I actually liked.
Good right out of the bottle and better as it opens up (45 minutes). Delicious.
This Single Vineyard was aged in American oak barrels for 15 months.

Great fruity nose with black currants, blackberries, figs, smoke, licorice, oak, vanilla, sweet cherries, earth, wild flowers, graphite and black pepper.
Full bodied and smooth, with medium acidity and long legs.
Dry and spicy on the palate with blackberries, black currants, sweet raspberries, cherries, dried figs, tobacco, spices, wood, licorice, peppercorn, earth, dark chocolates and espresso.
Long finish with round tannins, tangy cranberries and spices.
This is a great Cabernet from Israel. Well balanced with great complexity. Smooth and elegant already, and will get better with more time in the bottle. Showing a great mouthfeel, a spicy finish, and it still has enough acidity to make it interesting.
Needs 90 minutes to open up properly and show some tannins and complexity.

Inky in color with a dark purple rim.
Sweet nose of blueberries, blackberries, sweet cherries, strawberries pie, vanilla, oak, blackberries, ripe plums, licorice, acetone, light cloves and peppercorn.
Full bodied, big and bold, with medium acidity and long legs.
Extremely fruity and Dry on the palate, with dried figs, blackberries, sweet plums, earth, leather, cherries, oak, vanilla, cola, licorice, cedar and peppercorn.
Long finish with firm tannins, spices and black pepper.
This Cabernet Sauvignon from Sonoma County is really enjoyable by itself to sip on. Complex and well balanced.
A Great wine to pair with a nice piece of filet mignon, which is exactly what I did.
It still needs a few years to chill in the bottle, but I loved it as it is.

***Clocking in at 11% abv, this sweet rose` wine is dangerous due to how delicious it is, thus making it impossible to stop at just one glass. Another PA wine win for this gal. Even my friend who adamantly claimed she hated all types of wine ended up falling hard for this wine. I was able to locate this wine in a select few PA Wine & Spirits stores in my stomping grounds in the southern metro area of PGH. This is a great Cabernet from Napa Valley. Well balanced and enjoyable by itself or with food.
Showing nice complexity and mouthfeel.
Needs an hour to open up properly, but good right out of the bottle and good for parties.
Drinking nicely now and will be good in the next few years.
I paired it with beef tenterloin.

Dry and extremely fruity on the palate with blackberries, black currants, sweet cherries, raisins, vanilla, licorice, spices, oak, chocolates, smoke, coffee, beef jerky and peppercorn.
Long finish with firm tannins and black pepper.
This Californian Cabernet is always delicious. Can't go wrong here. Well balanced and enjoyable by itself as a sipping wine, or even with food. A Very enjoyable finish with a great mouth feel and chewy tannins.
Nice complexity joins in after 30 minutes of airtime.

This reasonably priced bottle of happiness would truly be a delight on any occasion.
