My ideal weeknight sparkling wine. My dad is a big Cava fan, so naturally I was raised to be the same. This wine is so reasonably priced and arguably over performs. Crisp and straightforward with notes of green apple, lemon zest, and a little pear, plus a light toasty finish. The bubbles are lively but not aggressive, making it super drinkable. Perhaps the most interesting & intriguing older wine/Barolo I’ve had in memory. It showed its tannin profile and fruit. Tart and just gently sweet cherries, tomato leaf, soft, almost sweet tarriness, light tobacco & leather. Group intrigue. Special.
