2017 vintage. @ Mister A’s Restaurant, San Diego-Les Caves de St. Charles CDP dinner. Initially, an absolute ballbuster. Massive tannins with a modicum of velveteen fruit at the end of a long tunnel. After two hours? Surprise! Change partners and the nearsome, fearsome tanninfest coalesced into the velveteen fruitfest. Remarkable concentration, tho, from start to finish over the course of the dinner. Best newer-vintage CDP, out of roughly 200, that I’ve had in the last two years. Just a remarkable chameleon. I love this wine. So good and so unique. Nose is so mineral. Hint of butter as well. Some smoke and flintiness as well. Palate is racy, rich and so pure. Great focus and length. So clean. This wine could get a stain out of a carpet. Superb freshness, concentration and purity. Long and sapid. — 2 years ago
2015 vintage. This 5.5 hectare estate was owned by famous consultant Alain Raynaud who sold it in 2016 to Tom Sullivan. Mainly Merlot with 20% Cabernet Franc. Attractive nose with red fruits, cedar wood and a hint of truffle. Structured, a little severe still, but good balance and complexity. Will benefit from further bottle ageing. Decanting recommended if you want to enjoy it now. — 4 years ago
Incredible vintage for Lachaux. With even more clarity and definition than the ripe 2018 rendition, 2019 Les Proces is gorgeous tonight, explosively aromatic, and showing incredible purity, elegance and finesse.
