Surprised this wasn't more tannic - thought it was very well structured with dark jammy fruits and bell pepper on the nose (actually didn't find the pepper notes unpleasant at all, which I typically steer clear of). Black fruits, charcoal smoke, cracked black pepper all hit high with some light hints of licorice and...jalapeño? All in all a pleasant wine to pair with a homemade Beef Wellington on this anniversary year of the Judgement of Paris. — 10 years ago

After a two hour decant this wine nicely expressed all that it had to offer! Complex and inviting on the nose, it's remarkable how long the wine stays on your palette. Charcoal, tar, with a spritz of black cherry characterizes my first impression, surrounded by a subtle oak note and a rich tannic structure. If you have an abundance of patience you should cellar this wine, and if not pop the cork now!!! — 10 years ago

A little disappointed here...2007 I think overwhelms the wine with the ripe aspect of the warm vintage growing season. Instead of great it's pretty good. Maybe time will mellow it some into more equalibrium, but really it already seems to be mellowing as the structure is firm, though fine grained. Its like being at a really nice dinner and everything is great except for the one schmuck talking too loud and too much. The aroma is peppery, with currants and cassis, some purple floral notes, and a few hints of charcoal and stones. The opaque purple-colored 1996 Cabernet Sauvignon offers a spectacular, exotic bouquet of Peking duck skins, blackberry and cassis liqueur, roasted herbs, and burning charcoal. It is phenomenally intense, with record levels of dry extract and glycerin. This hedonistic blockbuster is crammed with jammy fruits nicely buttressed and framed by adequate acidity and tannin. Nice color of shades of purple, a bit hazy, and a bit bloody red. Nose of nice leather, sweet oak, dried strawberry, sugar plum, and cherry. Taste is warm, leathery, cranberries, zesty, dried strawberries, and a tiny bit of hickory note. Aftertaste is smooth, basically no tannins, a bit zesty, a bit oaky, and medium long. She is lighter compared to usual Shiraz from Aussie. Overall, she is a tasty wine and enjoy her now. — 9 years ago

Isaac Pirolo
The Caymus of the Central Coast. Inky with massively extracted red and black fruit, and in a mode not unlike pie filling. Not to be denied, it's loaded with vanilla, baking spice, fig, and a few drops of root beer extract. The aura of charcoal and new leather weave throughout, all with an edge of tilled earth. Translating this from taste and smell to sight and sound, this is walking into a brand new casino. — 9 years ago
