Drinking well. Slightly sherry / honey but less than you’d expect for the age. Solid bubble but lacks the complexity of its pairing — 2 years ago
ginger candy, nougat, rye bread, and faint notes of numerous tropical & citrus fruits w apples & pears
palate as above but add minerality, limestone chalkiness, and tonic ~ as well as golden sultanas to the broad fruit profile
very forward and focused ~ slight mid palate ~ good length ~ delivers a wealth of complexity in a compact space — 3 years ago
Golden Delicious Apple and ripe pear with toasty, yeasty finish. — 10 months ago
Popped and poured; enjoyed over dinner at Yoshitomo. The 2006 continues to show well, pouring a lovely straw color with a persistent mousse. On the nose, the wine is developing with a mix of apples, yellow tropical fruits, lemon curd, brioche, and nuts. On the palate, the wine is dry and the dosage brings balance with the acid, which is high. The finish is medium+. So lovely to drink right now and this could be said for a lot of 2006’s at the moment. Drink now through 2036. Disgorged in 2018 if I can read the code correctly. — 9 months ago

🍇 100% Chardonnay | Chablis AOC, Burgundy, France
A true gem of a wine of pure, mineral-driven Chardonnay from the iconic Kimmeridgian limestone-clay soils that define the northernmost vineyards of Burgundy, brushing the southern edge of Champagne.
On the nose:
Delicately floral with a streak of flinty minerality and lifted citrus notes. Pure, focused, and elegant.
On the palate:
Absolutely dry and crisp, with vibrant acidity and a medium-bodied mouthfeel. Zesty lemon, chalky tension, and just a whisper of orange peel at the very back end of the palate. Finishes with salinity and length that’s tailor-made for oysters and seafood.
Mouthfeel overall:
Fresh, lively, and laser-focused, this is Chablis at its finest, clean, precise, and impossibly drinkable. The kind of wine that reminds you why Chardonnay rules the white wine world.
Pairing tip:
✨ The ultimate oyster wine, though equally brilliant with sushi, scallops, or a lemon-butter sole.
Can’t have enough of it, and you won’t want to either. Cheers! 🦪🍋🥂 — 17 days ago
