Picked this up for a song a little while back - some library liquidation going on no doubt - and for what I paid, I probably should have bought an entire case. Gorgeous black olive and bacon fat umami going on here along with cassis and blackberry and chopped herbs. Faint, taut tannins hang at the edge of perceptibility. Hints of plum ski. In the finish. Old Calvados from a very good producer… starting to lighten in color. But intense caramel, butterscotch, and ripe red apples on the nose. Silken smooth and a long warming finish. Dangerously easy to slurp and swallow, swirl, slurp and swallow… repeat. Cold winter evening, roaring fire, 2-4 good friends… and all too soon the bottle is history. Insanely aromatic, thick nose of chamomile, lanolin and the color spectrum of peaches. On the palate tutti-frutti basket with everything from white cherry to oranges. Thank you to the somms that let me interlope on their blinding session today, and sneak a slurp of this magical stuff. — 5 years ago

This 21 is really starting to get good. A deeply layered nose of spices and garigue and stewed fruits or maybe it's more fruit leather plus mushroom. It's got all that and more flowing out of the glass.
It sits high on the pallette - meaning you really need to slurp, suck and swish to get everything out of it. Fairly low acids, which I think is good because any more acid would mask the subtle flavors. Maybe a little restrained but it makes you want to come back for more and more.
*Footnote - I 'Coravined' 2 glasses from this bottle then came back 2 weeks later and 😲 did this really come alive! It has an energy and vibrance that wasn't there out of the sealed bottle. — a month ago
