1 hour decant(lots chunky/fine sediment). A gorgeous inky purplish garnet color. On the nose: dark fruit, forest floor, smoked meat, floral, cigar wrapper, pencil lead. Taste: smooth, rich, creamy mouthcoating wine with blackberry/dark cherry, dark chocolate, earth, tobacco, baking spice, and a cedar/graphite medium plus finish with some slight dusty tannins. Pauillac Red Bordeaux Blend 2007

No formal notes . Medium ruby . Bit more coffee and roasted character at first , touch of oak perhaps. Quite rich and rounded on the palate at first, good acidity , good length . More red fruit , more delicate after a while , mineral , oyster shell , mineral and leaner on the long finish . Very classic , grafite tinged . This improved with air and really gained in complexity with time . I would be tempted to leave this a little longer or give it a longer decant . No rush here , will continue well for a further 10 years . Tied as my favourite wine of the flight with the Latour. — 3 months ago

Pale lemon in color.

Light nose of citrus fruits, minerals and light yeast.

Medium-bodied with high acidity.

Dry on the palate with limes, grapefruits, green apples, brioche, earth, light yeast, minerals, spices and herbs.

Long finish with limes and herbs.

This is a very tasty Champagne, albeit still young. Elegant and rich with nice complexity. Crisp and refreshing.

Didn't love it right out of the bottle, and needed 45 minutes of airtime to open up properly, so be patient.

I've had a few different vintages of this Champagne, and always enjoyed it.

Needs 5 years to mature properly, and will continue to age nicely in the next 15 years.

A blend of 51% Chardonnay and 49% Pinot Noir. Aged for 8 years on its lees.

12.5% alcohol by volume.

Sauternes Sémillon-Sauvignon Blanc Blend 2007

No formal notes . Pretty deep Amber , copper colour . Intense marmalade , saffron , creme caramel . Rich on the palate with rich marmalade , saffron notes . Good acidity , but rich. Good length . This is drinkable now and shows quite an advanced colour , though due to its richness will probably carry on delivering for another 20 years , perhaps longer .

This was a rather fascinating evening put together by our incredibly generous host. All 2007 reds were served blind in two flights: 1st Mouton, Haut Brion, Cheval Blanc , La Mission Haut Brion then Latour , Lafite , Petrus and Margaux . Overall the wines showed well , and were mostly enjoyable to drink now , though there is no rush . This somewhat maligned vintage can give a lot of enjoyment in the right environment, I certainly wouldn’t hold back from opening or purchasing any of these wines . They mostly show good density of fruit , personality and elegance , with good freshness. These are not powerful wines , and at times perhaps the fruit can be a little cooler or greener but I was pleasantly surprised by the way they performed , just goes to show you should never write off a vintage without trying the wines !

Beautiful wine - one that has improved with age! Deep and rich color with a bouquet of cedar in the glass. Dark and plentiful fruit, integrated albeit present tannins, and a long finish. This is best Estournel that I have sampled! — 4 months ago

Medium lemon colour . Lovely lemon, buttered pastry nose , still so fresh and lively . Mineral with a honeysuckle note , touch of blanched almond . On the palate quite rich and complex , with high acidity and mineral , honied , brioche notes , still quite fresh though with lots of creamy lemon hints. Long mineral tinged finish . Dark Ruby with aromas of ripe berry fruit and floral spice, pure Caymus signature style, easy drinking, approachable as always. On the palate flavors of ripe blackberry, black cherry and currants with complex spice showing notes of cacao, cinnamon and rich vanilla oak. Initial with a little age is just incredible and really allows it to reach its full potential. 2018 disgorgement is showing fabulously, totally in the zone with distinctive Selossien aromatics, a rich, powerful and textural palate with racy acids and a chalky mineral core.
