Beautifully balanced between fresh, vibrant apple, lemon peel notes and brioche, biscuit, toasted almond, and pastry notes, with some delicate bruised pear characteristics revealing a bit of bottle age.

Mousse is fine-grained, persistent, and well-integrated. So good!

Morey-Saint-Denis Pinot Noir 2019

Super young. Once the primary & quite expressive fruit blows off, this is actually quite nice. Still on the fruitier side, but there’s a savoury, earthy whiff to it. Airy cherries, baking spice, good depth.
On the palate this is still youthful LY chunky but there’s good balance, good depth. This is surprisingly high in alc (14.5%!!) and it’s noticeable.
Very curious how this will evolve.

@Manny Abascal As long as you pour carefully and get a stopper in the bottles quickly I’ve found the best champagne usually lasts and improves for days or even weeks in the fridge! I sometimes use it as a proxy for storage potential similar to other wines.
