My two-day Pork Chop marinade. I have found the Long Shadows Poet Leap to be the perfect pairing.
Here is the recipe. Try it sometime.
4-6 thick cut bone-in pork chops
- 1 cup hoisin sauce
- 1 1/2 tablespoons of sugar
- 1 1/2 tablespoons of Tamari soy sauce
- 1 1/2 tablespoons sherry vinegar
- 1 1/2 tablespoons of rice vinegar
- 2 scallions chopped
- 1 teaspoon Tabasco Sauce
- 1 1/2 teaspoons of Lee Kim Kee brand chili sauce
-1 1/2 teaspoons of ginger finely chopped (I triple this)
- 1 1/2 teaspoons of garlic finely chopped (again.
I double this)
- 3/4 cup of cilantro finely chopped (no stems)
- 1 tablespoon of sesame oil

Whoa! Chipotle peppers! Crazy yummy, tasted his whole lineup which was excellent but this was a superb CabFranc. — a year ago
Very decent and better (more complex) than expected for only having cab franc. Round tannins, dark fruit/blackberry, pepper, menthol, eucalyptus. Medium finish. — 4 months ago
rich and satisfying, very good with the tenderloin we are having tonight — 9 months ago
@Lee Ibarra thanks buddy. This was drinking excellent (as expected) in fact it was my favorite wine from dinner and just in a perfect spot — 3 years ago
Adam Lee at his SLH best. Lush and complex. Dark cherry, cranberry, cinnamon, clove, a hint of stem and a solid oak backbone. Medium bodied, high alcohol, medium minus tannins, high acid, and a long finish. This is a big, bold pinot, (Burgundian on steroids?) without feeling forced. — 2 months ago
It is time for my #FridayCabernetfix.
Deep purple/ inky in color with a short purple rim.
Strong nose of black fruits, cedar, vanilla, licorice, light earth, herbs, spices, tobacco, chocolates, mocha, light perfume, cola and peppercorn.
Full-bodied with medium acidity and long legs.
Dry on the palate and very fruity, with black plums, black currants, blackberries, dark chocolates, coffee, cedar, vanilla, leather, spices, light earth, herbs, peppercorn and tobacco leaf.
Long finish with round tannins and tangy raspberries.
This young Cabernet Sauvignon from Napa Valley is already very approachable and good right out of the bottle. Nicely balanced with a beautiful nose.
Complex and fruit forward. Rich and extracted. Elegant with a nice mouthfeel.
Better after a couple of hours of airtime, when more earth notes show up to compliment the fruits.
I've had a few vintages of this wine, and it is very consistent. Will continue to age nicely in the next 10 years.
A good wine to pair with a big piece of steak, but also a nice sipping wine.
100% Cabernet Sauvignon grapes.
14% alcohol by volume.
92 points.
