Popped and poured; enjoyed over the course of two days. Best on Day 2. The 2021 Graacher Domprobst Spätlese (White Capsule) pours a day bright, light straw color with medium viscosity. On the nose, the wine is developing with powerful notes of tropical fruit: star fruit, passion fruit, lemons, petrol, rocky minerals. On the palate, the wine is dry with high acid. Confirming the notes from the nose. The finish is long with tongue smacking acid and minerals. A cracking pairing with lamb massaman, larb and papaya salad. Drink now with some patience but better after 2026 and through 2041. Beautiful stuff. — a year ago

Pop and pour. Notes from 1 hr open, paired with vegan mapo tofu. On the nose: soft underripe peach, green apple, loads of wet stone, pollen and soft citrus blossom. On the palate: fantastic acidity, green apple, soft honey, peach, just a hint of sweetness. Ok density at the moment...still a bit shrill and needs more time. At a beautiful spot. Nice golden color, fragrant minerals laced nose and tingling texture into long finish. Went nicely with variety of Indian dishes from Rasa for Leila’s one day early dinner with Cindy David. — 4 years ago
