Just phenomenal. And I am a Graach guy at Prum. More never and energy than WS. Nose is so ethereal. Lime zest, first of season green apple skins, slate, apricot, phyllo dough. So expressive. Some sweet rubber as well. Like brand new rubber boots. Palate is so elegant and concentrated but light yet almost middle weight and weightless. Huge fruit soak. Such purity. First night open: 20 year old vintage— chocolate on the nose with a stone fruit finish. Tasted clean and complex with an almost immediate light evaporation in your mouth leaving you with the feeling of bubbles dissolving. Delicious. — 8 months ago

Tawny with reddish amber rims. Dark yet translucent. Great old Chave nose. Black cherry, wet forest floor, smoked meats, menthol, slate stone and rhubarb notes. Vibrant in the mouth right out of the gate. Lots of structure and pucker. Fruit present but starting to fade. This was at peak first two hours and then started slowing down, opposite of the Trimbach CSH next to it. Still this was really good ~37 yr old grape juice. — 5 years ago

I gave up on Pegau after too many disappointing bottles. This one was super clean - glorious aromatics. Palate was herbaceous with dark fruit, tannic and rustic. Delicious! — 7 years ago

One of our absolute favorites. Light and living and just effervescent with lemon curd and clean starfruit and just enough acid to keep the structure together. Incredibly delicate and a well done balancing act to get these flavors to exist with just enough yeast to reflect the lees. Absolutely delightful.  — 6 months ago
