Flight #1 of our 1997 Retrospective. Presented single-blind; no formal notes. On the nose, this shared similar characteristics to wine #3. The most striking of which was a powerful note of finely ground cumin on the nose. Fruit is mostly desiccated at this point; the structure keeping everything together, but just. I called this to be “Rubicon”. While clearly in the sunset of its life, this showed slightly less energy than the Dalla Valle but no less charm. Drink now.

✔️ 적당한 산미, 약하지 않은 피니쉬, 시간이 지날수록 부드러워지는 질감까지! 가격 대비 넘 맘에 들었음
✔️ 산미 덕분에 이탈리아 음식과 페어링 하면 좋을 듯함
✔️ 3만원대 가격에 쟁여놓기 좋은 맛있는 와인

1.5 hour decant(decent chunky sediment). A majestic deep purplish magenta color with a little bricking. Always have a soft spot for aged Cain Five and Chris's old school savory style(embrace a little brett!). On the nose: stunning nose of worn leather, funky wet earth, red fruit, touch of menthol, nutty. Taste: Restrained, silky, elegant, balanced wine with dusty earth, herbaceous, currants, plum, cedarwood, and peppery dark chocolate medium finish. YUM! Too often this,wine is drunk at release. Just a little patience goes a long way. At 7 years the primary black and red fruit is still there with dried plums showing up along with cedar cocoa tar anise. Tannins still there so can go along a bit longer bit why wait — 3 months ago

Textbook #loirevalley #cabernetfranc, this one from #touraine ; It was late in the evening after happy hour so notes are a bit more approximate than usual. 😜 Pyrazines active, green pepper notes, shy black/purple fruit, soft tannins and a vegetal earthiness on the palate.
