2021/4/21-22 with pork shoulder Neapolitan alla genovese, busciata di tuminia cacio e pepe, etc. Rich with black cherry, iron and spice, but a nice backbone of acid keeping this fresh and tannin giving structure. I am always suspicious of native Italian varieties that see barriques, but it wasn’t intrusive here - whether due to a deft touch, time or both.
